Defrost spinach in microwave oven
- 2 * 2 pkg frozen chopped spinach, reserving 1/2 cup liquid remaining after defrosting
- 4 * 4 T butter
- 2 * 2 T flour
- 2 * 2 T minced onion
- 1/2 * 1/2 tsp. black pepper
- 1 * 1 tsp. Worcestershire
- 1/2 * 1/2 cup evaporated milk
- 3/4 * 3/4 tsp. celery salt
- 1/3 * 1/3 tsp. salt
- 3/4 * 3/4 tsp. garlic salt
- * Cayenne pepper to taste
- 1 * 1 8 oz roll Kraft jalapeno pepper cheese, shredded
- * Bread crumbs
Breakfast Burrito

Heat the canola oil in a large nonstick skillet over a medium-high heat
- 2 teaspoons canola oil
- 1/2 small red onion, diced (1 cup)
- 1 red bell pepper, seeded and diced
- 1 cup drained, rinsed canned black beans, preferably low-sodium
- 1/4 teaspoon chili flakes
- Salt and freshly ground black pepper
- 4 eggs and 4 egg whites
- 1/3 cup (about 1 1/2-ounce) shredded pepper Jack cheese
- Cooking spray
- 4 (10-inch) whole-wheat tortillas (burrito-size)
- 1/4 cup reduced-fat sour cream
- 1/4 cup salsa
- 1 large tomato, (4 ounces) seeded and diced
- 1 small avocado (4 ounces), cubed
- Hot sauce
Chopped Salad with Hearts of Palm, Artichoke Hearts, and Bleu Cheese

- 1 medium head iceberg lettuce, washed and dried
- 1 medium head romaine lettuce, washed and dried
- 10 to 12 frozen or canned (in brine) artichoke hearts (not marinated; about 12 ounces drained)
- 1 cup hearts of palm (about 12 ounces drained)
- 1 avocado
- 6 ounces bleu cheeses, such as Saga, Maytag, or gorgonzola, crumbled (1 cup)
- ¾ cup bacon bits, or 12 to 14 crumbled, crisp-cooked bacon strips
- ¾ cup chopped hard-cooked eggs (2 large eggs; see Note)
- ¾ cup finely minced red onion
- ¾ cup seeded, chopped plum tomato
- ¾ cup Dijon Vinaigrette

- 1 cup archichoke hearts, quartered
- 1 zucchini, diced
- 1/2 red onion, thinly sliced
- 1/2 cup frozen peas, thawed
- 1 cup cherry tomatoes, halved
- 1/2 cup parmesan cheese
- 1/4 cup pitted kalamata or black olives
- 1 T fresh basil, rinsed, dried, and cut into thin strips (or 1 tsp dried)
- 1/8 tsp salt
- ⅛ tsp ground black pepper
- 1 Tbsp extra virgin olive oil
- 2 Tbsp balsamic vinegar
- ½ C shredded parmesan cheese

- 2 large egg whites plus 2 whole eggs
- 1 1/4 cups buttermilk

- 1⁄4 cup water
- 5 large egg whites, at room temperature

- 1/4 pound pancetta, diced 1/4 inch cubes (do not substitute bacon)
- 2-1/2 to 3 pounds veal shanks (4 to 6 pieces 2-3 inches thick)
- 1/2 cup diced carrot (1/4 inch cubes)
- 1/2 cup diced celery (1/4 inch cubes)
- 1 medium onion, diced 1/4 inch pieces
- 2 Tbsp (about 4 cloves) chopped garlic
- 3-4 sprigs fresh thyme (or 1 tsp. dried)
- 1 cup dry white wine
- 1-2 cups chicken or veal stock
- Flour for dusting the meat before browning
