Parmesan Lemon Zucchini

The most amazing zucchini side dish made in 10 min or less
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- 4 zucchinis, thinly sliced to 1/2-inch thick rounds
- 1/2 teaspoon dried thyme
- Zest of 1 lemon
- Kosher salt and freshly ground black pepper, to taste
- 1/4 cup grated Parmesan
- 2 tablespoons freshly squeezed lemon juice, or more, to taste
Rich Chocolate Frosting

In a large mixing bowl, cream butter
- 1 cup butter (no substitutes),softened 4-1/2 cups confectioners' sugar
- 1-1/4 cups baking cocoa
- 1/2 teaspoon vanilla extract
- 1/2 cup milk

- 3/4 cup all-purpose flour, plus additional for dusting

- 6 T unsalted butter
- 1/2 shallot, thinly sliced

- Juice of 1 lemon
- 2 T water
- 1/3 cup (about 2 1/2 ounces) Parmesan cheese, freshly grated
- 12 fresh parsley leaves
