Turkey Stuffing

Heat a large skillet over medium heat
- 3 tablespoons reduced fat, trans-fat free margarine
- 1/2 large white onion, chopped
- 4 large carrots, peeled and grated
- 3 large celery stalks, trimmed and chopped
- 1 10-ounce package white button mushrooms, stalks trimmed, chopped
- 1/4 cup chopped parsley
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 2 bags whole grain seasoned croutons, about 10 ounces
- 3 cups, fat-free, reduced sodium chicken broth
Tuna Macaroni Salad

1 In a saucepan, add 1 cup of elbow macaroni to 1 quart of boiling water with an added teaspoon of salt
- 1 cup uncooked elbow macaroni
- 1 teaspoon salt
- 1 quart water
- 1/2 cup chopped green onion
- 1 cup chopped red, orange, and or yellow bell peppers, seeded and de-stemmed
- 1/4 cup chopped fresh parsley, packed
- 2 cans of tuna, packed in olive oil (do not drain), or if you get tuna packed in water, drain the water out and add 2-3 Tbsp olive oil.
- 2 stalks of celery, chopped
- Juice of 1/2 lemon, freshly squeezed
- 1/4-1/3 a head of lettuce (preferably iceberg lettuce), sliced first and roughly chopped into 2 inch long strips
- 1/2 cup mayonnaise
- 1/2 teaspoon paprika (we use sweet Hungarian)
- Fresh ground pepper
Famous Pumpkin Pie

This is the traditional holiday pumpkin pie
- 3/4 * 3/4 cup granulated sugar
- 1 * 1 teaspoon ground cinnamon
- 1/2 * 1/2 teaspoon salt
- 1/2 * 1/2 teaspoon ground ginger
- 2 * 2 large eggs
- 1 * 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
- 1 * 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
- 1 * 1 unbaked 9-inch (4-cup volume) deep-dish pie shell
- * Whipped cream (optional)
Sicilian Pizza Dough

Sicilian pizza dough has its toppings baked directly into the crust
- 1 1/2 * 1 1/2 cups of warm water (105F)
- 4 * 4 cups all−purpose flour
- 1 * 1 tablespoon of salt
- 4 * 4 tablespoons of olive oil
- 2 * 2 pkgs. active dry yeast
Honey Orange Teriyaki Chicken

In bowl, mix orange juice, Yoshida sauce, honey and 3T zest
- 1 cup Mr. Yoshida's Original Gourmet Sauce
- 1 cup orange juice (premium, not from concentrate) or juice from 3 oranges
- 6 T honey
- 1-1/2 lb chicken breast, sliced or chicken tenders
- 1 T olive oil
- 1/4 cup slivered or sliced almonds, toasted
Italian Ossobucco alla Milanese (Italian Veal Shanks)

Veal shanks should be sawed into 8 pieces about 2″ long
- 2/3 cup celery , finely chopped
- 1/4 cup butter
- 1 cup yellow onion , finely chopped
- 2/3 cup carrot , finely chopped
- 2 slices lemons , rind of
- 1/2 cup vegetable oil
- 1 teaspoon garlic , finely chopped
- 1 cup dry white wine
- 1 1/2 cups veal stock (can substitute homemade chicken of beef)
- 2 veal shanks
- 3/4 cup all-purpose flour
- 4 leaves fresh basil (optional)
- 2 bay leaves
- 2 sprigs parsley
- 1 1/2 cups Italian tomatoes , coarsely chopped
- 1/4 teaspoon dried thyme
- salt and pepper
- Gremolada
- 1 teaspoon lemon , rind of, grated
- 1/4 teaspoon garlic , very finely chopped
- 1 tablespoon parsley , finely chopped
Tuna and Artichoke Ciabatta Bread

Puree the olives, oil, garlic, and zest in a food processor until smooth and spreadable
- Tapenade:
- Ciabatta Bread, hollowed out
- 1 12 oz jar marinated artichokes, drained chopped
- 2 cans tuna, drained
- 3/4 cup Kalamara olives, drained
- lemon zest
- 1 tsp lemon juice
- 2 T olive oil
- 1/4 cup mayonnaise
- salt and pepper
- 1 Tomato, sliced
Piccolini Mini Farfalle with Cherry Tomatoes, Basil and Mozzarella

- 1 pint cherry tomatoes, halved
