Flank Steak Spirals

1. In a heatproof bowl, cover the porcini with 1 cup of boiling water
- 1 oz dried porcini mushrooms
- 2 garlic cloves, minced
- 2 T freshly grated Parmigiano-Reggiano cheese
- 1 T chopped sage
- 1 T chopped rosemary
- One 1 3/4-pound flank steak
- Salt and freshly ground black pepper
- 1 T pure olive oil
- 1/2 cup dry red wine
- 1/2 cup low-sodium beef broth
- 1 tsp cornstarch
- 1 T chopped parsley
Glazed Carrots
