Apple Pie Filling

Sprinkle the eggplant with salt
- 1 1/4 lb. eggplant, peeled and cut into 1/4-inch slices crosswise

- 1-1/3 cup part-skim ricotta or low-fat cottage cheese

Garlic Mashed Potatoes with Greek Yogurt & Scallions

Put potatoes, garlic, 1 teaspoon of the salt and enough water to cover them in a large pot
- 4 pounds Yukon Gold potatoes, peeled and cut into chunks
- 6 large cloves garlic, peeled
- 2 1/4 teaspoons salt, divided
- 1 1/4 cups 2% fat milk, warmed
- 3/4 cup 2% fat Greek yogurt
- 3 tablespoons unsalted butter
- 1/2 teaspoons freshly ground black pepper

In a large stock pot, melt butter over low heat
- 2 tablespoons butter
- 1/2 cup diced onion
- 1 medium carrot, diced
- 1 stalk celery, diced
- 1/2 teaspoon dried oregano
- 1 teaspoon flour
- 1 clove garlic, peeled and minced
- 4 cups chicken stock
- 2 cups Maggiano's Marinara Sauce
- 1 small baking potato, diced
- 2 plum tomatoes, diced
- 1 medium zucchini, diced
- 1 yellow squash, diced
- 1/2 cup canned chick-peas, drained
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 dark green romaine lettuce leaves, diced
- 1/4 ounce fresh basil leaves (stems removed), chopped
- 1/4 cup grated parmesan cheese, plus some for garnish
- 1/2 cup tubetti or other small pasta

Olive Garden Recipe Prep Time:1 hour, 30 minutes Cook Time:20 minutes
- Marinated Tomatoes:
- 1 1/2 lbs Roma tomatoes, cored* and cut into 1” pieces
- 20 medium fresh basil leaves, stems removed and cut into 1” pieces
- 2 Tbsp extra-virgin olive oil
- 1 Tbsp garlic, minced
- 1 tsp Italian seasoning
- Salt to taste
- 2 Tbsp butter
- 1/2 cup white wine
- 11/2 cups heavy cream
- 1 cup Parmesan cheese, grated
- 1 lb capellini (angel hair) pasta, cooked according to package directions
- 2 cups mozzarella cheese, shredded
- 1 lb 26/30 or 21/25 shrimp, peeled and deveined
- *Chef’s Note: To preserve juices and seeds, use a pairing knife to remove just the top of the core on each tomato.
