Gourmet Mushroom Risotto

In a saucepan, warm the broth over low heat
- 6 cups chicken broth, divided
- 3 tablespoons olive oil, divided
- 1 pound portobello mushrooms, thinly sliced
- 1 pound white mushrooms, thinly sliced 2 shallots, diced
- 1 1/2 cups Arborio rice
- 1/2 cup dry white wine
- sea salt to taste
- freshly ground black pepper to taste
- 3 tablespoons finely chopped chives
- 4 tablespoons butter
- 1/3 cup freshly grated Parmesan cheese
Soft Pretzel Bites

- Soft Pretzels:
- 1 1/2 cups warm water
- 2 tablespoons light brown sugar
- 1 package active dry yeast
- 3 ounces unsalted butter, melted
- 2 1/2 teaspoons kosher salt
- 4 1/2 to 5 cups all-purpose flour
- Vegetable oil
- 3 quarts water
- 3/4 cup baking soda (less is better)
- 1 whole egg, beaten with 1 tablespoon cold water
- Coarse sea salt
- Cheddar cheese sauce:
- 1/2 ½ Tablespoon unsalted butter
- 1/2 ½ Tablespoon all-purpose flour
- 1/2 ½ cup milk
- 8 ounces Cheddar cheese, grated
Fresh Asparagus Parmesan

- 1 bag Alpine fresh asparagus (Costco)
- 3 T olive oil
- 3 T soft white bread crumbs
- 5 T grated parmesan cheese
Pumpkin Sandwich Cookies

These pumpkin sandwich cookies filled with cream cheese frosting are a favorite Halloween treat at my house
- 1 cup solid pack pumpkin
- 1 package (16 ounces) refrigerated chocolate chip cookie dough
- 3/4 cup flour
- 1/2 tsp. pumpkin pie spice
- 1 container prepared cream cheese frosting
Ricotta and Carrot Filling for Ravioli

1. Preheat the oven to 400°
- 1 . 3 large carrots, peeled and cut into 1-inch chunks (3/4 pound)
- 2 . 1 tablespoon extra-virgin olive oil
- 3 . Salt and freshly ground pepper
- 4 . 2 teaspoons unsalted butter
- 5 . 1 tablespoon minced shallot
- 6 . 1 tablespoon heavy cream
- 7 . 5 ounces sheep's-milk ricotta or well-drained fresh cow's-milk ricotta (1/2 cup firmly packed)
- 8 . 6 tablespoons freshly grated Parmigiano-Reggiano cheese
- 9 . Pinch of freshly grated nutmeg
- 10 . 1 large egg yolk

To make the orange sauce, place the sugar in a wide saute pan or skillet over medium heat and stir in the water
- For the Orange Sauce:
- 8 sweet crepes made with the finely grated rind of 1 lemon added to the batter
- 1 T brandy
- 1/4 cup superfine sugar
- 1 T water
- Finely grated rind of 1 large orange
- 1/2 cup freshly squeezed orange juice
- 1/2 stick unsalted butter, diced
- 1 T Cointreau, Grand Marnier, or other orange-flavored liqueur
Night Owl's Favorite Gingerbread

- Icing:
- 2/3 cup shortening
- 3/4 cup sifted light brown sugar
- 2 T molasses
- 3 T boiled then cooled water
- 2 tsp grated lemon rind
- 2 1/4 cup sifted all purpose flour
- 1 tsp baking soda
- 1 tsp ginger
- 1 1/2 tsp cloves
- 1 tsp ground cardoman seeds
- 3 egg whites
- 1 lb confectioner's sugar
- 1 T white vinegar
