Easy Boneless Skinless Chicken Breast

Preheat Grill for at least 5 minutes
- 2 boneless skinless chicken breasts
- 1 tsp olive oil
- Salt to taste
- Pepper to taste
Hershey's Hot Cocoa

Stir together sugar, cocoa and salt in medium saucepan; stir in water
- 1/2 cup sugar
- 1/4 cup HERSHEY'S Cocoa
- Dash salt
- 1/3 cup hot water
- 4 cups (1 qt.) milk
- 3/4 teaspoon vanilla extract
- Miniature marshmallows or sweetened whipped cream(optional)
Caponata

Cut the eggplants into 1/2 cubes and place in layers in a colander, sprinkling each layer with salt as you go
- 4 eggplants (2 lb 4 oz.)
- 1/2 tsp salt
- 1 c olive oil
- 1 large onion, roughly chopped
- 2 celery stalks, sliced
- 1 small red capsicum (pepper), cut into short strips
- 2 T pine nuts
- 1 14oz can chopped tomatoes
- 4 T red wine vinegar
- 1 T sugar
- 2 T capers, rinsed and chopped if large
- 24 green olives, pitted and halved (remove pimento)
- 4 T finely chopped parsley
Shrimp Fried Rice

In a small bowl, whisk together soy sauce, sesame oil, ginger powder and white pepper; set aside
- 3 tablespoons soy sauce
- 1 tablespoons sesame oil
- 1/2 teaspoon ginger powder
- 1/2 teaspoon white pepper
- 2 tablespoons olive oil
- 1 pound medium shrimp, peeled and deveined
- Kosher salt and freshly ground black pepper, to taste
- 2 cloves garlic, minced
- 1 onion, diced
- 2 carrots, peeled and grated
- 1/2 cup frozen corn
- 1/2 cup frozen peas
- 3 cups cooked rice
- 2 green onions, sliced
Refreshing Sangria

Prep Time: 15 minutes Chill time: 2 hours
- 1 bottle good quality fruity white wine, like pinot grigio or sauvignon blanc
- 1/4 cup orange liqueur
- 1 medium peaches, washed, pitted and sliced (about 1 1/2 cups)
- 1 cup strawberries, washed, hulled and sliced
- 1 orange, thinly sliced
- 1 cup green grapes, halved
- 1 cup bing cherries, pitted and halved
- Ice

- simple syrup (see below; you’ll need water and sugar)
Crepes Alaska

Mediterranean Tuna Noodle Casserole

Choose best-quality tuna that's packed in olive oil for this dish
- 1/3 cup olive oil, plus more for baking dishes
- Coarse salt and ground pepper
- 1 pound wide egg noodles
- 2 red bell peppers (ribs and seeds removed), thinly sliced
- 1/2 cup all-purpose flour
- 5 cups whole milk
- 4 cans (6 ounces each) tuna in olive oil, drained
- 1 can (14 ounces) artichoke hearts, drained and thickly sliced
- 5 scallions, thinly sliced

- 1 teaspoon cilantro
- 2 tablespoons fresh chopped green onions
- 1 large flour tortilla
- 1/2 cup shredded Mexican cheese
- Olive oil to brush tortilla
Almond Butter Sugar Cookies

1. Cream your butter and sugar together for at least 2 minutes
- Cookies:
- 1 C butter, softened
- 1 1/2 C sugar
- 2 eggs
- 1 t vanilla
- 1 t almond extract
- 1 t butter flavoring
- 3 C flour
- 2 t baking powder
- 1 t baking soda
- 1/2 t salt
- Frosting:
- 1 8 oz package cream cheese, softened
- 1/4 C butter, softened
- 1 t vanilla
- dash salt
- 3-4 C powdered sugar
- 2-3 T milk
Cherries Jubilee
