Cheese Filled Jumbo Shells

Cook pasta according to package directions
- 1 12 oz package of jumbo shells, uncooked
- 4 cups (2 lbs) ricotta
- 2 cups (8 oz) shredded mozzaella cheese
- 3/4 cup grated parmesan
- 3 eggs
- 1 T chopped fresh parsley
- 3/4 tsp dried oregano leaves
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 3 cups spaghetti sauce

Roasted Lemon Asparagus

- 1 pound of asparagus, ends trimmed
- 1/2 pound cremini mushrooms, sliced
- 1 large lemon
- 1 small onion, thinly sliced
- 2 tablespoons capers, rinsed and chopped
- 2 tablespoons olive oil, divided
- 1/4 cup dry white wine
- 2 tablespoons fresh chervil or flat leaf parsley chopped
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper to taste
- 1/8 teaspoon cayenne
Meat Filling for Ravioli

1. In a skillet, melt the butter in the oil
- 1 . 2 teaspoons unsalted butter
- 2 . 2 teaspoons extra-virgin olive oil
- 3 . 1/2 pound ground pork, veal, turkey or chicken (or a mixture of all four)
- 4 . 1/2 small onion, minced
- 5 . 1 garlic clove, minced
- 6 . Salt and freshly ground pepper
- 7 . 1/4 cup dry white wine
- 8 . 1/4 cup freshly grated Parmigiano-Reggiano cheese
- 9 . 1 ounce mortadella, finely chopped
- 10 . 1 ounce prosciutto, finely chopped
- 11 . Pinch of freshly grated nutmeg
- 12 . 1 large egg, lightly beaten
Bacon, Butternut Squash and Basil Baked Risotto

- 1 1/2 oz unsalted butter

- 4 1/2 cups (36 fl oz) vegetable stock
- 1 cup finely grated parmesan cheese
