Bread Pudding with Apples, Pecans and Raisins

Panera Bread Recips Delight guests with this fruity bread pudding made with our signature Cinnamon Raisin bread
- 4 tablespoons (1/2 stick) unsalted butter
- 1 loaf Cinnamon Raisin White Bread torn into bite-size pieces
- 1/2 cup brown sugar, packed
- 1/2 cup pecan halves
- Zest and juice of 1 large orange
- 1/4 cup apple cider
- 1 tablespoon vanilla extract or rum
- 8 small baking apples (about 2 pounds) such as Fuji, Gala or Granny Smith, peeled, cored and thinly sliced
- 1/2 cup apple, quince, or blackberry jam or jelly
Tiramisu

Preparation Make in advance a strong coffee
- 1 lb lady fingers
- 4 egg yolks
- 1/2 cup Marsala
- 1/2 cup sugar
- 1 lb Mascarpone
- 225 ml whipped cream
- 350 ml strong coffe or espresso
- 1 Tablespoon sugar
- 2 tablespoons Baileys
- cacao for decoration
Pizza Sauce

1. Heat the oil in a large skillet over high heat
- 2 * 2 tablespoons olive oil
- 1/4 * 1/4 Cup chopped onions
- 1 * 1 tablespoon minced garlic
- 3 * 3 Italian plum tomatoes, peeled and minced
- 3 * 3 oz. canned tomato paste
- 2 1/2 * 2 1/2 tablespoons Italian seasoning
- 1/2 * 1/2 Teaspoon Salt
- 1/4 * 1/4 Black Pepper
- 1/2 * 1/2 Stick Unsalted Butter, sliced
Guacamole

Make sure that your avocados are completely ripe before cutting them open
- 4 large ripe avocados, preferably Haas
- 3 ripe tomatoes, seeded, finely chopped
- 1/4 cup minced red onion
- 2 jalapeno chilies, seeded, finely chopped
- 3-4 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1/2 teaspoon sea salt
- 3 tablespoons minced fresh cilantro
- pinch of cayenne or ground aji amarillo
Chocolate Cream Cheese Frosting

Have all ingredients at room temperature
- 4 (1 oz) squares unsweetened chocolate
- 1 (8 oz) package cream cheese
- 4 cups confectioners' sugar
- 1 T vanilla extract
- 1/8 teaspoon salt
- 2 T evaporated milk
Crab Cakes

Combine all ingredients except the crab meat in a bowl
- 1 lb. Lump Crab Meat
- 2 Slices White Bread, crumbled, crust removed
- 1 Egg, beaten
- 2 tbsp. Mayo
- 1 tsp Seafood Seasoning
- 1 tsp. Worcestershire Sauce
- 1 tsp. Dijon Mustard
- 1 tbsp. Dried Parley Flakes
- 2 tsp. lemon juice
- Extra virgin olive oil or butter
Breakfast Crepes

- Special equipment:
- 1 1/2 cups whole milk
- 3 large eggs
- 3 tablespoons sugar
- 1 teaspoon salt
- Scant 5 tablespoons unsalted butter, melted
- 1/2 cup brandy
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- Additional butter for cooking
- Additional sugar or clear jelly such as apple or apricot for serving

- 2 cups thinly sliced mushrooms

- 2 cups canned diced tomatoes, drained

- Grated zest of 1 orange
- 1 teaspoon pure vanilla extract
