Best Ever Taco Seasoning Mix

Make your own taco seasoning mix and leave the packaged stuff on the shelf
- 1 tbs chili powder
- 1/4 tsp garlic powder or granulated
- 1/4 tsp onion powder
- 1/4 tsp cayenne
- 1/4 tsp dried oregano shopping list
- 1/2 tsp paprika
- 2 tsp ground cumin
- 1 tsp course salt
Texas Smoked Cheese Dip

Step 1. Place the cheese and cornstarch in a small saucepan and toss to combine
- 2 cups (8 ounces) grated sharp smoked Cheddar
- 1 tablespoon cornstarch
- 1 can (12 ounces) evaporated milk
- 1 cup drained fresh salsa (refrigerated, not jarred)
- 1 to 2 teaspoons mild hot-pepper sauce, such as Frank’s (optional)
- 1 Panera Bread Sourdough Loaf, cubed

- 1 9 ounce package fettuccine
- 1 cup frozen green peas
- 3 slices center-cut bacon

- 1/2 cup fat-free half-and-half
- 1/2 cup shredded Parmesan
Chicken & White Bean Salad

Zucchini and celery give this chicken-and-bean salad a nice crunch
- Vinaigrette
- 1 medium clove garlic
- 1/4 teaspoon salt
- 5 tablespoons extra-virgin olive oil
- 6 tablespoons fresh orange juice, plus more to taste
- 1/4 cup white-wine vinegar or red-wine vinegar
- 1 tablespoon Dijon mustard
- Salad
- 1 15-ounce can cannellini or other white beans, rinsed and drained
- 2 1/2 cups diced cooked chicken breast (see Tip)
- 2 cups diced zucchini and/or summer squash (about 2 small)
- 1 1/2 cups diced celery
- 1/4 cup finely diced ricotta salata, halloumi (see Shopping Tip, above) or feta cheese
- 1/3 cup chopped, well-drained, oil-packed sun-dried tomatoes (optional)
- 1 cup coarsely chopped fresh basil, plus whole basil leaves for garnish
- Salt & freshly ground pepper to taste (optional)
- 2 cups torn escarole or romaine lettuce
- 2 cups torn radicchio leaves

- 1 teaspoon vegetable oil
- 1 onion, chopped
- 1 1/2 teaspoons minced garlic
- 3/4 cup uncooked quinoa
- 1 teaspoon cumin
- 1 1/2 cups vegetable broth
- 1/4 teaspoon cayenne pepper
- 1 Tablespoon lime juice
- 1 cup frozen corn
- 2 (15 ounce) cans of black beans, drained and rinsed
- 1/2 cup fresh cilantro, chopped
- 1 ripe avocado, diced (optional)
- to salt and pepper taste
