Crockpot Meatloaf & Potatoes

Meatloaf and potatoes is one of my family’s favorite meals
- 2.5 pounds of ground turkey (or beef, if you prefer)
- 1 egg
- 3/4 cup smashed cornflakes (or bread crumbs, but I prefer corn flakes)
- 1 envelope of Lipton onion soup mix
- 2-3 Tbsp Worcestershire sauce
- salt, pepper, paprika, garlic salt, Italian seasoning to taste.

Spicy Buffalo Chili

This spicy chili recipe uses buffalo, or bison meat, instead of the usual ground beef
- 1 tablespoon vegetable oil
- 2 1/2 pounds ground buffalo meat
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 jalapeno, seeded and diced
- 1 red bell pepper, diced
- 1 can (28-oz) tomato puree
- 1/2 cup chili powder
- 1 tablespoon ground cumin
- 1/2 tsp ground chipotle pepper
- 1/4 tsp cinnamon
- 1 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cayenne
- 2 cups beef broth, or water
- 2 (15 oz) cans pinto beans, drained
- water as needed
Tandoori Chicken

The day before you plan to make the chicken, wash chicken and pat dry
- One chicken, 3-4 pounds
- 2-tablespoon coconut oil (one to melt and pour over chicken the day before, one for braising)
- 2 tablespoons butter
- 2 cups coconut milk
- Zest of two lemons
- Ten garlic cloves, unpeeled
- Two teaspoons tandoori seasoning (If you want to make your own, use equal parts cardamom, cayenne pepper, cinnamon, clove, coriander, cumin, ginger, nutmeg and turmeric. Store whatever you have left over.)
- 1 teaspoon kosher salt
