ONE POT BBQ CHICKEN PASTA

- 4 slices bacon, diced
- 1 boneless, skinless chicken breast, cut into 1-inch chunks
- 2 cloves garlic, minced
- 1 onion, diced
- 2 cups chicken broth
- 1 (14.5-ounce) can diced tomatoes
- 1/2 cup milk
- 1/4 teaspoon crushed red pepper flakes, or more, to taste
- 3 cups rotini pasta
- Kosher salt and freshly ground black pepper, to taste
- 1/4 cup barbecue sauce, or more, to taste
- 1 cup shredded cheddar cheese
Beef Enchiladas II

Preheat oven to 350 degrees F (175 degrees C)
- 1 pound lean ground beef
- 1 small onion, chopped
- 1 (1.5 ounce) package dry enchilada sauce mix
- 10 (10 inch) flour tortillas
- 2 cups shredded Cheddar cheese
- 1 (2.25 ounce) can sliced black olives, drained
Chocolate Chip Cookie Dough Brownies

1. Prepare the brownies: Preheat oven to 325 degrees F
- BROWNIE:
- 4 ounces unsweetened chocolate, finely chopped
- 1 cup salted butter, melted
- 2 cups light brown sugar, packed
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 cup mini- chocolate chips

- 3/4 cup salted butter, at room temperature
- 3/4 cup light brown sugar, packed
- 3/4 cup granulated white sugar
- 3 Tablespoons milk
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 cups mini chocolate chips
- 1/2 cup semisweet chips + 1 teaspoon shortening for drizzle, optional
Pork Lo Mein

Cook spaghetti in large saucepan as directed on package, omitting salt
- 220 g whole wheat spaghetti, uncooked
- 1/4 cup Kraft Asian Sesame Dressing
- 1 (450 g) lb. pork tenderloin, cut into strips
- 2 cloves garlic, minced
- 3 cups frozen stir-fry vegetables, thawed, drained
- 1/2 cup 25%-less-sodium beef broth
- 1 Tbsp. Kraft Light Smooth Peanut Butter
- 1/4 cup reduced-sodium soy sauce
- 2 chopped Tbsp. fresh cilantro
Dad's Cookies

Mix ingredients together. Bake at 350 about 10 minutes
- 1 c. butter or marg.
- 1 c. white sugar
- 1 c. brown sugar
- 2 c. quick cooking rolled oats
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 1 c. coconut
- 1 tsp. vanilla
- 2 c. stirred all purpose flour
Buffalo Chicken Sandwich

You will also need: 1 Gallon size storage bag
- 4 defrosted chicken breasts or 20 frozen chicken wings
- 1/2 cup flour
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 4 whole wheat bread or 4 whole wheat rolls, for sandwiches
- olive oil (for frying)
- 1/4 cup butter, melted (we use I Can't Believe its Not Butter, really no difference in taste)
- 1/4 cup frank red hot sauce
- 1/8 teaspoon garlic powder or 1 garlic clove, minced very fine
- 1/2-1 1/2 teaspoon cayenne pepper
- red pepper flakes, depending how much heat you want, to taste
- sliced Tomato
- iceberg lettuce
- bleu cheese salad dressing (optional)
Baked Beans

Soak beans in baking soda overnight
- 2 lbs. beans
- 1 tsp. baking soda
- 2 med. onions chopped
- 1/2-3/4 c. brown sugar
- 1/2-3/4 c. ketchup
- 2 tbsp. dry mustard
- 1/4-1/3 c. molasses
- salt & pepper
Potato Soup

- 3 tablespoons bacon grease (reserved) or butter
- 1 cup diced white or yellow onion
- 1/4 cup all-purpose flour
- 2 cups chicken stock
- 2 cups milk, warmed
- 1.5 pounds potatoes, peeled (if desired) and diced (I recommend Yukon gold potatoes)
- 1 cup shredded sharp cheddar cheese
- 1/2 cup plain Greek yogurt or sour cream
- 1 teaspoon Kosher salt, or more to taste
- 1/2 teaspoon freshly-cracked black pepper
- optional toppings: thinly-sliced green onions or chives, extra shredded cheese, extra bacon, sour cream
Zucchini Parmesan Crisps

- 1/4 cup freshly grated Parmesan (3/4-ounce)
