Morning Glory Muffins

Preheat oven to 350 degrees F (175 degrees C)
- 2 cups all-purpose flour
- 1 1/4 cups white sugar
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 2 cups shredded carrots
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 1/2 cup unsweetened flaked coconut
- 1 apple – peeled, cored and shredded
- 3 eggs
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
BBQ Sauce for Chicken Legs

Heat until butter is melted Makes 1 cup
- 1/2 cup margarine
- 1 tsp salt
- 2 tbsp vinegar
- 1 tsp onion salt
- 1/4 tsp pepper
- 1/2 cup water
Chicken Pot Pie with Ham

Preheat oven to 425 degrees, with rack in the middle
- 2 tablespoons butter
- 1 carrot, halved lengthwise and thinly sliced
- 1 medium onion, chopped
- 1 fennel bulb, cored and chopped
- 1/2 teaspoon fennel seed, crushed
- 1/4 cup all-purpose flour, plus more for work surface
- 1 cup whole milk
- 1 can (14.5 ounces) reduced-sodium chicken broth
- 1 rotisserie chicken (about 2 1/2 pounds), skin and bones removed, meat shredded (about 4 cups)
- 1 ham steak (8 ounces), cubed
- 1 tablespoon fresh lemon juice
- Coarse salt and ground pepper
- 9 -inch-round store-bought pie dough (from a 15-ounce package)
Zesty Italian BBQ Pulled Chicken Sliders

Place chicken in crock pot, pour over barbecue sauce, Italian dressing and brown sugar
- 2-3 pounds boneless skinless chicken breasts2 12 ounce bottles barbecue sauce (use your favorite)
- 1/4 cup brown sugar
- 1/2 Homemade Zesty Italian Salad Dressing (recipe to follow)
- slider rolls
- dill pickle slices
- shredded Monterey jack cheese
- Zesty Italian Salad Dressing
- 2 tablespoon garlic powder
- 2 tablespoon onion powder
- 2 tablespoon white sugar
- 1/4 cup dried oregano
- 1 teaspoon ground black pepper
- 1/4 teaspoon ground thyme
- 1 tablespoon dried basil
- 1 tablespoon dried parsley
- 1 teaspoon salt
- 1 teaspoon red pepper flakes
- 1/4 cup white vinegar
- 1/2 cup olive oil
- Add 2 tablespoons of Italian Salad Dressing Mix to vinegar and oil, in a pint mason jar or resealable container. Chill and serve.
Snickerdoodle Cake w/Brown Sugar Cinnamon Buttercream

To Bake the Cake: Preheat oven to 325°F
- For the Cake:
- 1 1/2 cups all-purpose flour
- 1 1/2 cups cake flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- 2 sticks butter (8 ounces by weight), softened to room temperature
- 1 3/4 cups fine or superfine sugar
- 4 large eggs, room temperature
- 1 tablespoon vanilla extract
- 1 1/4 cups whole milk, warmed to room temperature
- For the Buttercream:
- 4 and 1/2 sticks butter (or 1 pound, 2 ounces by weight), softened to room temperature
- 1 cup light brown sugar, packed
- 2 teaspoons ground cinnamon
- 8-9 cups confectioner's (powdered) sugar
- 1 teaspoon vanilla extract
- 1/2 cup of half and half, plus more if needed
- Optional:
- Whole cinnamon sticks for garnish
No Bake Eclair Cake

Mix pudding and milk in a bowl
- Frosting:
- 1 package (1 lb.) graham crackers
- 2 small french vanilla instant pudding (3.4 ounces each)
- 3 1/2 cups milk (I used skim)
- 8 oz. Cool whip
- 3 tablespoons of unsweetened baking cocoa
- 1 1/2 cups powdered sugar
- 3 tablespoons of butter (room temperature)
- 3 tablespoons of warm milk
- Mix above ingredients til smooth. Add more powdered sugar if you like the frosting a little thicker. If it's too thick, just add a little more milk
Bonnie's Sweet & Sour Sauce (Meatballs)

Mix sugar & flour Add the rest of ingredients Bring to boil
- 2 c packed brown sugar
- 1/4 c water
- 2 tbsp soya sauce
- 1/2 c vinegar
- 2 tbsp flour
- 1 tbsp ketchup
Steve's Basic BBQ Rub

Mix all the ingredients together well and keep in an air tight container in the same place that you keep your spice...
- 3/4 cup paprika
- 1/2 cup sugar
- 1/2 cup salt
- 1/4 cup ground black pepper
- 3 tbsp cayenne pepper
- 2 tbsp thyme
- 2 tbsp dry mustard
- 2 tbsp cumin
- 1 tbsp sage
Best Cocoa Brownies

Position a rack in the lower third of the oven and preheat the oven to 325°F
- 10 tablespoons (140 grams) unsalted butter
- 1 1/4 cups (250 grams) sugar
- 3/4 cup plus 2 tablespoons (65 grams, though some brands may weigh more) unsweetened cocoa powder (natural or Dutch-process)
- 1/4 teaspoon salt (or a heaping 1/4 teaspoon flaky salt, as I used)
- 1/2 teaspoon pure vanilla extract
- 2 large eggs, cold
- 1/2 cup (65 grams) all-purpose flour
- 2/3 cup (75 grams) walnut or pecan pieces (optional)
