- 1 1/2 tsp black pepper
- 1 1/2 tsp dry mustard
- 1 1/2 tsp sugar
- chicken or shellfish stock
- 8 oz andoille sausage
- 1/2 cup flour
- 1 1/2 cup red or green bell pepper
- 2 cup chopped onion
- 1 cup chopped celery
- 1/2 cup chopped parsley
- 1 lb crab meat and shrimp
Roasted Rosemary Chicken with Potatoes

Directions Position an oven rack in the top of the oven and preheat to 450 degrees F
- 1 1/2 pounds small baby red or tricolor creamer potatoes, quartered
- 1 tablespoon extra-virgin olive oil
- 1 1/2 teaspoons finely chopped fresh rosemary
- Kosher salt
- Four 6- to 8-ounce halved bone-in chicken breasts with skin
- Freshly ground black pepper
Irish Stew

Heat oil over medium heat in a large stockpot or Dutch oven
- 1 teaspoon olive oil
- 11 ounces boneless lamb shoulder, cut into 1 1/2 inch pieces
- 1/8 teaspoon salt
- freshly ground black pepper to taste
- 3/8 large onion, sliced
- 5/8 carrots, peeled and cut into large chunks
- 3/8 parsnip, peeled and cut into large chunks (optional)
- 1-1/3 cups water, or as needed
- 1 large potatoes, peeled and quartered
- 1 teaspoon chopped fresh rosemary (optional)
- 1/3 cup coarsely chopped leeks
- chopped fresh parsley for garnish (optional)
Paisan's Lasagna

1. Remove the sausage from the casings; chop the sausage
- 1 Lb hot Italian sausage
- 1 Lb ground beef
- 1/2 cup of finely chopped onions
- 4 cloves of garlic crushed
- 2 tablespoons of sugar
- 1 tablespoon sea salt
- 1 1/2 teaspoons dried basil leaves
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon pepper
- 1/2 cup fresh chopped parsley
- 4 cups of canned tomatoes undrained or 1 can 2Lb, 3oz Italian style tomatoes
- 2 cans 6 oz size of tomato paste
- 1 tablespoon salt
- 1 lb package of lasagna noodles you will use 12 or so
- 1 container (15oz) ricotta cheese
- 1 egg, 1/2 teaspoon salt
- 1 lb mozzarella cheese thinly sliced
- 1 cup of freshly grated Parmesan cheese
- 2 cups Chianti wine optional
Tai Dipping Sauce

- 2 tbs lime juice (freshly squeezed)
- 2 tbs rice vinegar (unseasoned)
- 1 tbsp soy sauce
- 1 tsp red pepper flakes
- 1 tbsp Siracha
- 1 tbsp sugar
- 1 tsp garlic (minced)
- 1/2 tsp sesame oil (Asian)
- 2 tbs chopped fresh cilantro
