Instructions: Preheat the oven to 400°F
- 2 2/3 cups fresh ricotta
- 2 heaping tablespoons chopped, fresh mixed flat-leaf parsley, basil, marjoram, and/or thyme
- Salt and freshly ground pepper to taste
- 11 ounces sun-dried tomatoes
- 1 cup pitted black olives
- 1 cup shelled pistachio nuts
- 11 ounces ripe plum tomatoes, peeled, seeded, and chopped
- Olive Oil, for drizzling
- 4 basil leaves, torn
- 6 slices rustic bread, lightly toasted

- 2 1/2 Lbs of boneless beef chuck
- Butter
- 3 Tablespoons brandy
- 1/2 Lbs small white onions, peeled about 12
- 1/2 lbs small fresh mushrooms
- 2 1/2 tablespoons potato starch
- 2 to 2 1/2 teaspoons meat extract paste (Beefer - upper)
- 2 Tablespoons Tomato Paste
- 1 1/2 cups Burgundy
- 3/4 cup dry sherry
- 3/4 cup ruby port
- 2 Tablespoons Brandy
- 1 can (10 1/2 oz) condensed beef broth, undiluted
- 1/8 teaspoon pepper
- 1 bay leaf
- Chopped parsley
General Tso's Cauliflower

1. In a medium bowl, whisk the flour, cornstarch, baking powder and salt to combine
- 1 teaspoon salt

- 1 head cauliflower, cut into bite-size florets

- 6 scallions, white part finely sliced, green part chopped into 1-inch pieces
- 3 cloves garlic, minced
- 1 tablespoon minced ginger
- 5 small dried chiles (optional)
- 1/4 cup vegetable broth
- 1/4 cup soy sauce
- 3 tablespoons rice vinegar
- 2 tablespoons mirin
- 3 tablespoons sugar
- 1 tablespoon cornstarch
- Sesame seeds, for garnish (optional)
Brown Rice & Red Beans in Light Coconut Milk (Congris)

Instructions: Bring 2 cups of brown rice to a boil in 4 cups of water, and then simmer for 30 minutes

Paisan's Southern Fried Chicken Waffles & dipping Sauces

- For the chicken:
- 1 (3-pound) chicken, cut into 8 pieces
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon sweet Spanish paprika
- 1 teaspoon poultry seasoning
- 1/2 teaspoon garlic powder
- 1 tablespoon brown mustard
- 2 cups buttermilk
- Peanut or vegetable oil, for frying
- 2 cups all-purpose flour
- 2 teaspoons Sazonador seasoning
- For the eggnog waffles: Can substitute buttermilk or whole milk
- 2 cups all-purpose flour, sifted
- 2 teaspoons baking powder
- Pinch of ground cinnamon
- Pinch of ground nutmeg
- 2 cups eggnog
- 2 large eggs, separated
- 4 tablespoons (1/2 stick) unsalted butter, melted
- Cooking spray, for the waffle iron
- Strawberry Butter (recipe follows), for serving
- Maple syrup, for serving
- Strawberry Butter:
- 1 cup (2 sticks) unsalted butter, slightly softened
- 4 ounces strawberries, hulled and sliced (about 3/4 cup)
- A few drops of grenadine syrup
- Maple-Horseradish Syrup
- 1 cup pure maple syrup
- 1 tablespoon prepared horseradish, drained
- 2 teaspoons Dijon mustard
- Whisk together ingredients in a small bowl. Leftover syrup mixture can be stored in the refrigerator for up to a week.

- 1/2 loaf Italian bread (5 ounces)

- 2 garlic cloves, minced
- 1 tablespoon sherry vinegar or red-wine vinegar
- 1 tablespoon olive oil
- 1 head Belgian endive, stem end trimmed, thinly sliced
