Chickpea Curry Wraps – Lunch On-The-Go!

You can use canned chickpeas or make them by soaking dry chick peas over night in water
- Dressing:
- 3/4 cups dry chickpeas (or one 15 ounce can cooked, rinsed and drained)
- 1/2 red pepper, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup raisins
- 2 large sprouted wheat tortillas (gluten free option: use gluten free tortillas)
- 2 cups baby spinach
- 1/2 lime, juiced
- 1 teaspoon curry powder
- 1 teaspoon honey (vegan option: use 1 teaspoon coconut nectar)
- 2 tablespoons extra virgin olive oil
- salt and pepper, to taste
Spicy Hummus

Drain chickpeas, reserving liquid
- 1 can (15 ounces) chickpeas (garbanzo beans)
- 2 tablespoons lemon juice
- 1 tablespoon tahini
- 1 tablespoon olive oil
- 1 package Simply Organic Black Bean Seasoning Mix
- 1/2 teaspoon crushed red pepper

- 1/4 cup water
- 4-5 cloves of garlic, minced
- 1 Tablespoon dijon mustard
- 2 Tablespoons nutritional yeast

- juice of half a lemon
- 1/4 teaspoon sea salt

- 3 cups warm water
- 2-3 tbsp of raw cacao powder
- 2 tbsp coconut oil
- 2 tbsp Dandy Blend
- 1-2 tbsp hemp seeds
- 1 tbsp coconut sugar
- 1 tsp cinnamon
- 1/2 avocado
The Easiest Chickpea Greek Salad

Place all salad ingredients into a large bowl and toss to combine
- For the salad:
- 1 (15 oz) can of chickpeas, rinsed and drained
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1 small red onion, chopped
- 15 grape tomatoes, halved
- 1/3 cup pitted kalamata olives
- 1 cucumber, sliced and quartered
- 4 oz feta cheese, crumbled or cut into 1/2 inch cubes
- For the dressing:
- 2 teaspoons olive oil
- 2 tablespoons freshly squeezed lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- freshly ground salt and pepper, to taste
Chai Spice Mix

Mix all spices together, and store in tupperware or a sealed plastic bag
- 2 tbsp. ground ginger
- 1 tbsp. ground cinnamon
- 2 tsp. ground cloves
- 2 1/2 tbsp. ground cardamom
- 2 tsp. nutmeg
- 2 tsp. allspice
- 1/2 tsp. white pepper
- Yields about 1/3 cup
The Best Watermelon Juice

Scoop out the flesh of the watermelon and add to a blender
- 1 small watermelon
- 1 lemon
- 1 T raw wildflower honey
Purple Shake

- 1 cup almond milk, unsweetened
- 1/2 cup fresh or frozen organic blueberries
- 1 tbsp green powder like spirulina or a handful of spinach
- 2 tbsp almond butter
- 1 tbsp tahini
- 1 tsp vanilla
- a few drops of liquid stevia, to taste
Banana Chai Smoothie

Combine all ingredients in a blender and blend till smooth
- 1 heaping tsp. chai spice mix (separate recipe)
- 1 1/2 large bananas, frozen (or 2 small)
- 4 ice cubes
- 2/3 cup almond milk
- 1 tbsp almond, cashew, or coconut butter (optional!)
Crock Pot-Rustic Irish Potato and Cabbage Soup

Cook the onion and garlic in a bit of oil until the onion is soft
- 1 medium onion, chopped
- 2 garlic cloves, crushed
- 6 medium potatoes, scrubbed and chopped
- 4 carrots, chopped
- 1/2 head of cabbage, chopped
- 1 smoked sausage, sliced
- 2 32oz boxes chicken broth
- 2 bay leaves
- 1 tsp. thyme
- Salt and pepper to taste
- 1/8 tsp. sugar
- 1 Tbs. cider vinegar, optional
