Key Lime Pie (Dairy Free)-Ivy Larson

PECAN CRUST Preheat oven to 325 degrees
- Serves 8
- PECAN CRUST
- 2 1/2 cups raw pecans
- 6 medjool dates
- 2 tablespoons plus 2 teaspoons organic extra virgin coconut oil (such as Barlean’s)
- 1/4 teaspoon unrefined sea salt
- 1 teaspoon pure vanilla extract
- 6 tablespoons millet flour
- 2 tablespoons coconut flour
- KEY LIME PIE FILLING
- 1 can (13.5 ounces) organic coconut milk
- 1 banana
- 1 tablespoon arrowroot
- 3 organic, pastured eggs (such as Vital Farms)
- 1/8 teaspoon unrefined sea salt
- 1/2 teaspoon pure vanilla extract
- 1/2 cup Nellie & Joe’s Famous Key West Lime Juice (NO substitutions!)
- 10 medjool dates
Yacon Salad Dressing

Yacon Salad Dressing
- 2 tbsp extra-virgin olive oil
- 3-4 tbsp yacon syrup
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 2 tbsp ginger
- Sea salt and pepper to taste

Preparation Preheat oven to 350° F
- 2 lb ground beef or turkey
- 1 onion, diced
- 4 tsp minced garlic
- 2 packets taco seasoning (plus water per packet instructions)
- 1-2 cans (2 oz) sliced black olives, drained
- 1 can (4 oz) diced green chilies
- 1 can (10 oz) diced tomatoes
- 12 oz taco sauce
- 2 cans (16 oz each) refried beans
- 12 8-inch flour or corn tortillas
- 16 oz shredded cheese
- Optional: enchilada sauce
Peach Pie Overnight Oats
