- 1 Leaf of Bok Choy
- 1 Anjou Pear
- 1/2 Frozen Banana (or whole if you need more sweetness)
- 1 inch piece of Ginger
- 1 handful of Parsley
- 1 cup coconut water or water
Slow Cooker Tortilla Soup

Place all the ingredients in a slow cooker , except the tortilla chips, and cook on high for about 3-4 hours
- 4 cups cooked pinto beans OR 2 15-ounce cans beans, drained and rinsed
- 3 cups tomatoes, diced
- 4-5 cups vegetable broth
- 1 onion, diced
- 1-2 jalapeno peppers, sliced
- 1 bell pepper, chopped (red or yellow work best)
- 2-3 cloves garlic, minced
- Salt to taste
- 1 T chili powder
- 1 tsp cumin
- Tortilla chips or tortilla strips
- Garnish options: lime juice, avocado, cilantro, vegan sour cream

Pumpkin Spice Latte

In a medium size cooking pot on medium heat combine all your ingredients except your vanilla and warm through

- Cook Time: 10 minutes
- Serves: 4-5
- 3 C. of milk (I used whole)
- 2-3 C. of strongly brewed coffee (see recipe below)
- 1/4 C. of pumpkin puree
- 1/4 C. of vanilla extract
- 1/4 C. of sugar
- 3/4 tsp. pumpkin pie spice
- 1/2 tsp. of cinnamon
- 1-2 cinnamon sticks
- Whipped cream, pumpkin pie spice, cinnamon stick and ground nutmeg, optional for garnish

- 1 whole free-range chicken or 2 to 3 pounds of bony chicken parts, such as necks, backs, breastbones and wings*
- gizzards from one chicken (optional)
- 2-4 chicken feet (optional)
- 4 quarts cold filtered water
- 2 tablespoons vinegar
- 1 large onion, coarsely chopped
- 2 carrots, peeled and coarsely chopped
- 3 celery stalks, coarsely chopped
- 1 bunch parsley
- Note: Farm-raised, free-range chickens give the best results. Many battery-raised chickens will not produce stock that gels.
