No Bake Peppermint Patty Bars

1. Line an 8-inch pan with two pieces of parchment paper, one going each way
- 2 cups rolled oats, processed into a flour (use gluten-free if necessary)
- 1/2 cup almonds
- 1/2 cup walnuts
- 4-5 tbsp cocoa powder, to taste
- 1/2 tsp fine grain sea salt, or to taste
- 2 tbsp packed brown sugar
- 2 tbsp almond milk
- 5 tbsp pure maple syrup
- 1/4 cup rolled oats (use gluten-free if necessary)
- 1/4 cup dark chocolate chips
- 75 grams dark chocolate (about 3/4 chocolate bar)
- 1 tsp coconut oil
- 1/4 tsp peppermint extract
- Flaked coconut, to garnish (optional)
Frozen Grasshopper

- 2 cups vanilla ice cream
- 1/2 cup green creme de menthe
- 1/2 cup white creme de cacao
- 1 1/2 cups ice

Blueberry Coconut Oatmeal

Add ingredients to pre-made cooked soaked oatmeal
- 4 cups cooked soaked oatmeal
- 3 TB butter or coconut oil
- 1 cup shredded coconut (I get this cheapest in bulk at our local health food store)
- 1 1/2 cups blueberries, pureed (I use thawed blueberries from our summer picking and when we run out either frozen organic from Costco…or we wait until July picking again!)
- 1/2 tsp vanilla extract
- 2-4 TB raw honey (Optional – the blueberries are sweet enough on their own)
Cabbage Roll Soup

In a large pot, brown onion, garlic, pork and beef
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 lb lean ground beef
- 1/2 lb lean ground pork
- 3/4 cup uncooked long grain rice
- 1 medium head cabbage, chopped (core removed)
- 1 (28 ounce) can diced tomatoes
- 2 tablespoons tomato paste
- 4 cups beef broth
- 1 1/2 cups V8 or other vegetable juice
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- salt and pepper, to taste

- 1 can full fat unsweetened coconut milk
- 2 T maple syrup
- 1 cup strawberries (I used fresh, but frozen can work too)

- 2-3 cups water (or coconut water)
- 1 lemon, peeled and chopped
- 1 cucumber, chopped (you may wish to peel if it’s not organic)
- 2 celery stalks, chopped
- 2 cubes wheatgrass
- 1 inch ginger
- 1 cup blueberries
- 2-3 handfulls spinach (I just fill the rest of the blender with spinach)
