KAF Blueberry Muffins

This muffin is the one to go to for a well-behaved, consistent recipe
- 2 1/4 cups King Arthur Unbleached All-Purpose Flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup (4 tablespoons) unsalted butter, at room temperature
- 3/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup sour cream or plain yogurt
- 1 1/2 cups blueberries, fresh or frozen
- coarse white sparkling sugar for garnish (optional
Southern Green Beans

Place the chopped bacon in a skillet and cook over medium heat , stirring occasionally, for 8-10 min
- 6 slices bacon, chopped
- 3 T. Butter
- 1 onion, chopped
- 2 lbs fresh green beans, trimmed and snapped
- 8 small new potatoes
- 1 large clove of garlic, minced
- 1/4 cup chicken stock
- 1-1/2 t. Balsamic vinegar
- Salt and pepper to taste
Blueberry Scones

Preheat the oven to 375°F
- 2 cups (8 1/2 ounces) King Arthur Unbleached All-Purpose Flour*
- 1/2 teaspoon salt
- 1/4 cup (1 3/4 ounces) granulated sugar
- 1 tablespoon baking powder
- 6 tablespoons (3 ounces) cold butter, cut into pieces
- 1 cup (about 5 ounces, about half a pint) fresh blueberries
- 2 large eggs, beaten
- 1/4 cup (2 ounces) vanilla yogurt
- 1 teaspoon vanilla extract
- 1 tablespoon grated lemon zest (or 1/4 teaspoon lemon oil)
- 1/2 teaspoon almond extract
- 2 tablespoons coarse sugar, for sprinkling on top
- *Substitute 1 cup King Arthur Organic White Whole Wheat Flour for 1 cup of the all-purpose flour, if desired.

Ham, Cheddar, and Chive Egg Bakes

Preheat the oven to 400°F
- 2 tablespoons extra-virgin olive oil
- 3/4 cup diced yellow onion (from 1/2 medium onion)
- 2 garlic cloves, minced
- 4 ounces cooked ham steak, coarsely diced into small cubes (about 1 cup)
- 1-2 tablespoons butter, to grease ramekins
- 6 large eggs
- 3/4 cup whole milk
- 1 tablespoon fresh chopped basil, optional
- 3 tablespoons fresh chopped chives
- 1/4 teaspoon kosher salt
- 3/4 cup grated cheddar cheese
Broccoli-Cheese Chowder

Heat oil in a Dutch oven or large saucepan over medium-high heat
- 1 tablespoon extra-virgin olive oil
- 1 large onion, chopped
- 1 large carrot, diced
- 2 stalks celery, diced
- 1 large potato, peeled and diced

- 1 tablespoon all-purpose flour
- 1/2 teaspoon dry mustard
- 1/8 teaspoon cayenne pepper
- 2 14-ounce cans vegetable broth, or reduced-sodium chicken broth
- 8 ounces broccoli crowns, (see Ingredient Note), cut into 1-inch pieces, stems and florets separated
- 1 cup shredded reduced-fat Cheddar cheese
- 1/2 cup reduced-fat sour cream
- 1/8 teaspoon salt
Sausage & Pepper Pizza

Place a cast-iron pizza pan in an oven and preheat to 450°F
- Dough for one 12-inch pizza
- Cornmeal for dusting
- Extra-virgin olive oil for brushing
- 6 plum tomatoes, peeled, seeded and diced,
- or 1/4 cup tomato sauce
- 1 ⁄3 lb. mozzarella cheese, thinly sliced
- Salt and freshly ground pepper, to taste
