- 1 cup sour cream (I used light & it is still very decadent)
- 1 can condensed cream of potato soup
- 1 tbsp worcestershire sauce (or A1 sauce for vegetarians)
- 2 lb small red potatoes
- 1.5 cups shredded cheddar cheese or cheese blend (can double cheese to make cheesier, if calories are not an issue :) hehe)
- 1/2 tsp paprika
- 3 tbsp chopped fresh chives for topping

- Vegetable oil for frying
- 2 chicken breasts (skinless and boneless), sliced length-wise into 4 strips, then those strips sliced length-wise in half, making a total of 8 strips per breast

- Pinch cayenne pepper
- 1/2 cup flour
- 2 eggs
- 2 cups sweetened, shredded coconut
- 1 tablespoon chives, finely minced

- 1 lb boneless skinless chicken breast
- 2 tablespoons all-purpose flour
- 5 tablespoons honey dijon mustard
- 1/2 cup dry breadcrumbs, plain
- 2 tablespoons vegetable oil
Chicken Mozzarella Roll-Ups

step 1: Preheat the oven to 375 degrees F
- 4 small (4 ounces each) boneless, skinless chicken breasts
- 12 large, fresh basil leaves, rinsed and patted dry
- 4 pieces roasted red pepper (available in jars), about 2 inches by 5 inches, ribs and membrane trimmed, patted dry
- 4 ounces shredded reduced-fat mozzarella cheese (about 12 Tablespoons)
- 1 1/2 cups canned, plain tomato sauce
- Optional
- For extra flavor, add 1/2 teaspoon of dried oregano to the tomato sauce.
