Bacon Ranch Pea Salad

Place bacon in a skillet over medium-high heat, and cook until evenly brown
- 4 slices bacon
- 1 quart water
- 1 (16 ounce) package frozen green peas
- 1/3 cup chopped onions
- 1/2 cup Ranch dressing
- 1/2 cup shredded Cheddar cheese
Applesauce Spice Cake

Heat oven to 350°F. Grease and flour 13x9-inch pan
- Cake:
- 2 1/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/3 cups applesauce
- 1/3 cup oil
- 2 eggs
- 3/4 cup chopped peeled apple (1 medium)
- 1/2 cup raisins, if desired
- Frosting:
- 1/4 cup butter (do not substitute margarine)
- 4 cups powdered sugar
- 1/4 teaspoon ground cinnamon
- 1 teaspoon vanilla
- 6 to 8 tablespoons apple juice or milk
Stuffed Cheese Buns

Mix together the yeast and water and let it sit for a couple minutes
- 1 cup warm water (probably somewhere between 105º and 115º. I just get it hot from the tap. Don't get it too hot or it will kill the yeast.)
- 2 tablespoons yeast
- 2 tablespoons sugar
- 2 teaspoons garlic powder
- 1/4 cup melted butter
- 1/4 cup olive oil
- 3 cups all-purpose flour
- 2 teaspoons salt
- At least 8 oz. of cheese, the more the merrier (I used chunks of mozzarella for the inside and a mixture of shredded colby and swiss for the top)
- Parmesan cheese
- A few tablespoons of melted butter mixed with a sprinkle of garlic powder and some fresh herbs if you want.
Pistachio Cake

Preheat oven to 350F degrees
- Cake:
- 1 box vanilla, white or yellow cake mix
- 1 (3.4oz) box instant pistachio pudding
- 3 eggs
- 1 cup oil
- 1 cup milk
- green food coloring (optional)
- Frosting:
- 1 (3.4oz) box instant pistachio pudding
- 1/2 cup milk
- 1 (8oz) tub frozen whipped topping, thawed
- green food coloring (optional)
Grilled Ham and Cheese Pull-Apart Sandwich Loaf

1. Heat gas or charcoal grill
- 1 loaf Italian bread (10 to 12 inches)
- 3 tablespoons butter or margarine, softened
- 1 tablespoon spicy brown or country-style Dijon mustard
- 6 slices (1 oz each) Swiss cheese
- 3/4 lb thinly sliced fully cooked ham
Cookie-Peanut-Ice Cream Pizza

Heat oven to 350°F. Spray 12-inch pizza pan with cooking spray
- 1 roll (16.5 oz) Pillsbury™ refrigerated chocolate chip cookies
- 1 jar (16 oz) hot fudge topping
- 1/2 gallon (8 cups) vanilla ice cream
- 1 cup salted Spanish peanuts
Bacon Egg and Cheese Ring

1. Heat oven to 375 degrees
- 1 can of crescent rolls
- 5 large eggs; scrambled
- 1 cup of shredded Colby and Monterrey jack cheese
- 8 slices of cooked bacon (I bought the pre-cooked stuff)
- 1 teaspoon of season salt
Easy Lemon Chicken Potato Casserole

Preheat oven to 425 degrees F
- 2.5 cups condensed cream of mushroom OR cream of chicken soup (the equivalent of 2 cans)
- 1/2 cup milk
- 1.5 lbs. Yukon gold potatoes, very thinly sliced (no thicker than 1/8")
- 2 cloves garlic, minced
- 1 small white onion, peeled and thinly sliced
- 1.5 lbs. boneless, skinless chicken breasts
- salt and freshly-ground black pepper
- 1 lemon, thinly sliced and halved (into half coins)
- (optional garnish: chopped fresh parsley or fresh thyme)
Campfire Philly Cheesesteak

These are always a huge hit whenever we go camping but are just as easily enjoyed at home using your grill or oven
- 1 large loaf French bread
- 1/4 cup garlic butter {I make my own using butter and garlic powder}
- 2 cups onion & green pepper, sliced and cooked (I slice and cook this before camping then just pack the cooked mixture into the cooler.)
- 2 tablespoons butter or oil (for cooking onions and pepper)
- 1/4 cup oyster sauce (for cooking onions and pepper)
- 21 ounces (600g) roast beef, sliced
- 16 ounces (500g) provolone cheese, sliced (Mozzarella would work too).
- Aluminum foil
