7 Layer Dip Recipe - Layers of salsa, guacamole, sour cream, beans, cheese, pico de gallo and olives
- 31 ounces refried beans
- 8 ounces cream cheese (softened, optional)(I used low fat)
- 1 package taco seasoning
- 1 1/2 cups sour cream (I used low fat)
- 2 cups guacamole
- 1 1/2 to 2 cups chunky medium salsa
- 1 cup shredded cheddar cheese
- 3 roma tomatoes (diced and drained of juices)
- 4 ounces sliced olives or jalepenos (1 can, drained)
- 1/4 cup cilantro (chopped, more to taste)
- 1 bunch green onions (sliced thin, optional)
- 1/2 lime (optional)
- s&p to taste
- tortilla chips or Fritos for servings
Maple Nut Cake (Gluten Free Vegan)

*To make nuts: preheat the oven to 375 degrees and position rack in center of oven
- Salted Maple Nuts:
- 2 6 inch cake pans
- 1 cup sliced almonds
- 1 cup sliced walnuts
- 2 Tbsp maple syrup
- 2 Tbsp maple sugar
- 1/2 tsp sea salt
- Cake:
- 1/2 cup almond flour
- 1/4 cup ground hazelnut meal
- 1/4 cup ground walnut meal*
- 3/4 cup coconut flour
- 1 1/2 tsp baking soda
- 1 tsp sea salt
- 1 cup maple sugar or granulated sugar
- 1/2 cup coconut oil
- 1 1/2 cups lite organic coconut milk or almond milk
- 1 Tbsp pure vanilla extract
- 2 tsp maple extract
- 2 Tbsp cider vinegar
- Frosting:
- 2 8 oz pkgs tofutti vegan cream cheese
- 1/2 cup almond butter
- 1/2 cup plus 2 Tbsp maple syrup
- 1 Tbsp pure vanilla extract
- 2 tsp maple extract
- a pinch of sea salt

- 1/2 cup sunflower seed butter (you can either buy this pre-made, or you can make your own by processing 2 cups of sunflower seeds in a food processor until it is smooth and creamy like almond butter)
- 1/2 cup almond butter
- 1 egg, beaten
- 2 tsp vanilla extract
- 1/3 cup maple syrup
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 tsp salt
- 1 cup dark chocolate, coarsely chopped into chunks.
- Coarse sea salt, to sprinkle on top (optional)
RAW CHOCOLATE-FUDGE CAKE

- 1/2 a large, very-ripe banana
- 2 T (or more!) cocoa powder (10g)
- 4 T Artisana Coconut Butter, or Homemade Coconut Butter
- scant 1/16 tsp salt
- 5 drops pure peppermint extract, or more if desired
- optional: cacao nibs, fresh mint leaves
