These Paleo cinnamon rolls are different than their gluten counterparts in the level of sweetness and in their size
- For the dough:
- 2 tbsp coconut oil, melted
- 1 egg
- 1 tbsp honey
- 1 tsp vanilla extract
- 1 1/2 cups almond flour
- 1 tbsp coconut flour
- 1 tsp baking soda
- Pinch of salt
- For the filling:
- 1 tbsp cinnamon
- Honey, for drizzling
- 1/4 cup pitted Medjool dates, finely chopped
- 1/4 cup walnuts, finely chopped
- For the glaze:
- 2 tbsp honey
- 2 tbsp coconut cream
- Pinch of cinnamon
HUDSON'S MAURICE SALAD

This salad was born in Detroit at the JL Hudson Department store, and is now served at Macy's
- DRESSING:
- 2 t. white vinegar
- 1 1/2 t. lemon juice
- 1 1/2 t. onion juice
- 1 1/2 t. sugar
- 1 1/2 t. Dijon mustard
- 1/4 t. dry mustard
- 1 c. mayonnaise
- 2 T. chopped fresh parsley
- 1 hard cooked egg, diced
- salt to taste
- SALAD INGREDIENTS:
- 14 oz. ham, cut into strips
- 14 oz. cooked turkey breast, cut into strips
- 14 oz. Swiss cheese, cut into strips
- 1/2 c. slivered, sweet gherkin pickles
- 1 head Iceberg lettuce, shredded
- 12-16 pimento stuffed green olives
Eggplant and Zucchini Lasagna, Paleo

This hearty recipe takes the traditional lasagna preparation and packs it full of vegetables instead of noodles
- For the meat sauce
- 1 large yellow onion, coarsely chopped
- 2 cloves garlic, coarsely chopped
- 2 tbsp extra virgin olive oil
- 1 1/2 lbs. ground beef
- 1/2 cup tomato paste
- 1/2 cup tomato sauce
- 1 cup red wine
- 1 bay leaf
- 3 sprigs thyme
- Salt and freshly ground pepper, to taste
- For the lasagna
- 1 eggplant, sliced lengthwise thinly
- 1 tsp salt
- 1 tbsp extra virgin olive oil
- 2 yellow squash, sliced thinly
- 1/2 cup torn fresh basil leaves
- 8 oz. white mushrooms, sliced
- 2 cups fresh spinach
- 2 large zucchini, sliced lengthwise into ribbons
- For the topping
- 1/2 head cauliflower
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp salt
- Freshly ground pepper, to taste
MARINARA SAUCE, SIMPLE

1. Heat the oil in a medium sauce pan over medium high heat
- 4 tablespoons grapeseed or olive oil
- 1/2 small onion, sliced
- 1 box Pomi tomatoes (strained)
- 1 box Pomi tomatoes (chopped)
- 2 garlic cloves, crushed
- 1 tablespoon salt
- 1/2 tablespoon black pepper
- 6 fresh basil leaves
