Sweet Potatoes with Cilantro

Preheat the oven to 450 degrees
- 2/3 cup dried cranberries
- 6 tablespoons EVOO
- 3 tablespoons fresh lime juice
- 2 tablespoons sugar
- 1 teaspoon lime zest
- 3 1/2 pounds sweet potatoes, peeled, cut into 3/4-inch cubes
- 1 1/2 teaspoons ground coriander
- 1 1/2 teaspoons ground cumin
- Salt and pepper
- 1/4 cup chopped cilantro
Upside-Down Cinnamon-Apple Coffee Cake

- 1 box (18.25 oz) devil's food cake mix with pudding in the mix
- 1 1/3 cups water

- 3-4 cups powdered sugar, or to taste

Apple Coleslaw

Instructions Toss the cabbage, apple, celery, and bell pepper together in a large bowl
- 1/2 small red or green cabbage, chopped
- 1 tart apple (Granny Smith recommended), grated or chopped
- 1 large stalk celery, chopped
- 1 medium bell pepper (any color), chopped
- 1/4 cup olive oil
- juice of 1 lemon
- 2 Tbs raw honey
- 1 tsp celery seed

- 2 Cups Rolled Oats
- 1/2 Cup Sliced Almonds
- 1/2 Cup Coconut
- 2 Tbs Honey
- 2 Tbs Canola Oil

- 1 Tsp Vanilla
