Pumpkin Muffins

Instructions Preheat oven to 350℉
- 1 1/2 cups almond flour
- 3/4 cup canned pumpkin (or cook and puree pumpkin yourself)
- 3 large eggs
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 1 1/2 tsp pumpkin pie spice
- 1/8 tsp sea salt
- 1/4 cup raw honey (optional)
- 2 tsp almond butter
- 1 Tbs sliced almonds
Applesauce

In a saucepan, combine all ingredients
- 4 Apples peeled and cored
- 3/4 cup water
- 1/4 cup Sugar
- 1/2 Tsp Cinnamon
Paleo Ice Cream

Instructions An ice cream maker is needed for this recipe
- 1 (403 mL) can coconut milk
- 1/4 cup coconut sap (or raw honey)
- Any other ice cream ingredients desired (cocoa powder to taste, spices, frozen fruit, nuts, vanilla extract, etc.)
Lemon Fudge

Line a 9-in. square pan with foil
- 1-1/2 teaspoons plus 6 tablespoons butter, divided
- 2 packages (10 to 12 ounces each) vanilla or white chips
- 2/3 cup sweetened condensed milk
- 2/3 cup marshmallow creme
- 1-1/2 teaspoons lemon extract
Bahama Mama

Mix all ingredient together in shaker and pour over ice
- 1 Part Coconut Rum
- 1 Part Grenadine
- 1 Part Pineapple Juice
- 1 Part 7-Up
- Ice
Pepper Jack Cheesy Mac

Directions PREHEAT oven to 350° F
- 2 cups (8 oz.) dry elbow macaroni
- 2 cups (8-oz. pkg.) shredded cheddar cheese
- 2 cups (8 oz.) shredded Pepper Jack cheese, divided
- 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
- 1/2 teaspoon ground black pepper
- 1/2 to 1 cup broken tortilla chips (your choice of color)
- 1/4 to 1/2 teaspoon crushed red pepper (optional)
Vegan chocolate mousse

Purée the avocado until smooth
- 1 large ripe avocado
- 1/4 cup raw cocoa powder
- 1/4 cup coconut milk or almond milk
- 2 tsp stevia (or other natural sweetener)
- 1 tsp natural vanilla extract
- Optional extras: toasted sliced almonds, chia seeds, frozen mixed berries, almond butter, cocoa nibs, coconut oil
Tomato-Artichoke Crostini

1 Heat oven to 325°F. Line cookie sheet with foil
- 40 slices (1/2 inch thick) baguette French bread
- Cooking spray
- 1 jar (6 oz) marinated artichoke hearts, drained
- 2 cups chopped, seeded plum (Roma) tomatoes (6 to 7 medium)
- 2 tablespoons chopped fresh basil leaves
- 1/2 teaspoon salt
- 1/8 teaspoon coarse ground black pepper

- 48 Hersheys Kisses Chocolates
- 1/2 Cup Shortening
- 3/4 Cup Creamy PB
- 1/3 Cup Sugar
- 1/3 Cup Brown Sugar
- 1 Egg
- 2 Tbl Milk
- 1 Tsp Vanilla
- 1 1/2 Cup Flour
- 1 Tsp Baking Soda
- 1/2 Tsp Salt
- Sugar
Lemon Meringue Pie Martini

- Fresh Muddled Lemons
