Chocolate Zucchini Cake

Preheat the oven to 325°F
- 2 1/4 cups flour
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 3/4 cup light brown sugar
- 2 large eggs
- 1/2 cup (1 stick) butter, room temperature
- 1/2 cup strong coffee
- 3 cups shredded unpeeled zucchini, about 2 medium
- 1 cup (6 ounces) chocolate chips (if desired)
Ropa Vieja

In a large stock pot, put in the meat, 2 chopped onions, carrot, celery and bay leaf
- 4 pounds skirt steak or flank steak
- 4 medium onions, coarsely chopped and separated into 2 parts
- 2 carrots, coarsely chopped
- 3 celery stalk, coarsely chopped
- 2 bay leaves
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 4 jalapenos, minced
- 2 green bell peppers, seeded and chopped
- 1 tablespoon salt
- 10 fresh plum tomatoes, seeded and chopped or 2 cans chopped tomatoes
- 1/2 cup finely chopped parsley leaves
- 2 teaspoons dried oregano
- 1/2 teaspoon ground cumin
Indian Spiced Cauliflower

Preheat oven to 350 degrees
- 2 tablespoons butter or peanut oil
- 1 small onion, minced
- 1 clove garlic, smashed with the back of a knife
- 1 head cauliflower, leaves and core removed and cut into large florets
- 1 teaspoon cumin seed powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne powder or 2 green chiles, stemmed and cut lengthwise
- 1/2 teaspoon salt
- 1 tablespoon grated fresh ginger
- 1 cup diced tomatoes (canned or fresh)
- 1 cup water
- 1/4 cup roughly chopped cilantro (optional)
Curried Squash Soup

In a large saucepan, heat the oil and cook the onion and garlic until tender
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1 clove chopped garlic
- 1 3/4 cups chicken broth
- 1/4 cup apple juice
- 2 boxes frozen squash
- 2 teaspoons curry powder
- 1/2 teaspoon salt
- 1/4 cup cream
Red Curried Chicken

Mix flour, red curry powder and garlic salt in a ziploc bag
- 1 pound chicken breasts, cut into 1 inch cubes
- 3 tablespoons flour
- 1 tablespoon curry powder
- 1 teaspoon garlic salt
- 3 tablespoons vegetable oil
- 1 1/2 cups apple, peeled, cored and chopped
- 1 cup red onion
- 2 tablespoons brown sugar
- 1 teaspoon garam masala
- 1 can coconut milk

Preheat oven to 350. Mix sugar, butter and eggs together, add baking soda and salt
