Tennessee Whiskey Cake

Preheat oven to 350. Beat butter using a mixer at medium speed; gradually add sugars and beat until creamy
- 1/2 stick butter, room temperature
- 1/2 cup packed brown sugar
- 1/2 cup granulated sugar
- 3 eggs
- 1 cup flour, sifted
- 1/2 t. baking powder
- 1/4 t. salt
- 1/2 t. cinnamon
- 1/2 t. baking soda
- 1/4 cup 2% milk
- 1/2 cup sorghum or molasses
- 1/4 cup Jack Daniel's
Tropical Salad with Citrus Vinaigrette

In a large bowl, toss together the arugula, spinach, clementines, strawberries and blueberries
- 3 cups fresh arugula
- 2 cups baby spinach
- 2 clementines, peeled and in segments
- 1 cup strawberries, hulled and sliced
- 1/2 cup blueberries
- 1/2 cup praline pecans
- Dressing
- 2 ounces goat cheese
- Juice of one clementine (approx 2 tablespoons)
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1/2 teaspoon apple cider vinegar
Apricot Herb Glazed Turkey

Heat oven to 325°F. Remove neck and giblets from turkey cavities
- Turkey
- 1 (11- to 13-pound) turkey, thawed
- 1 tablespoon salt
- 1 teaspoon pepper
- 1/3 cup butter, softened
- 1/3 cup apricot perserves
- 2 tablespoons chopped fresh sage
- 2 tablespoons chopped fresh rosemary
- 2 carrots, sliced
- 2 ribs (1 cup) celery, sliced
- 1 medium (1/2 cup) onion, chopped
- 1/4 cup water
- Gravy
- 2/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 cups water or chicken broth

Make the marinade and marinade the pork loin at least two hours, or as long as overnight
- 2 pound pork loin
- Marinade
- Soy sauce
- Fresh ginger
- Minced garlic
- Lemon juice
- Pecan Praline Sauce
- 1 cup packed brown sugar
- 1/4 cup molasses or pancake syrup
- 1/2 cup water
- 1 teaspoon dry mustard
- 1 teaspoon curry powder
- 1 1/2 cups chopped pecans

- Shrimp, as little or much as you want
- 1/2 cup apple cider vinegar
- Old Bay Seasoning (or whatever you wish)
Chicken Marsala

Between sheets of plastic wrap or waxed paper, flatten each chicken breast to 1/4-inch thickness
- 4 boneless skinless chicken breasts (about 1 1/4 lb)
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
- 2 cloves garlic, finely chopped
- 1 cup sliced fresh mushrooms
- 1/4 cup chopped fresh parsley
- 1/2 cup dry Marsala wine or
- Hot cooked pasta, if desired

Cut the tomatoes in half crosswise, parallel to the stems and gently press the seeds out
- 1 pound ripe tomatoes
- 1 teaspoon finely chopped garlic cloves
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/3 cup extra virgin olive oil (I add this first so the noodles won’t stick)
- 1 cup shredded basil leaves
- 1 pound bowtie pasta
- 1/3 cup freshly grated mozzarella or Pamigiano-Reggiano
Margherita Pizza

- 16 inches pizza crust
- 1 tablespoon extra virgin olive oil
- 2 garlic cloves, finely chopped
- 3 - 4 large basil leaves, cut into strips
- 2 large tomatoes, cut thinly
- 8 ounces mozzarella cheese, shredded
- 2 tablespoons parmesan cheese
