Indian Chicken Stew

In a large pot, add chicken, onion, garlic, curry powder, ginger, salt, and pepper; toss to coat
- 2 pounds skinless, boneless chicken thighs, cut into 1-inch pieces
- 1/2 cup onion, chopped (1 medium)
- 3 cloves garlic, minced
- 5 teaspoons curry powder
- 2 teaspoons ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper and/or cayenne pepper
- 15 ounce can garbanzo beans (chickpeas), rinsed and drained
- 14 1/2 ounce can diced tomatoes, undrained
- 1 cup chicken broth
- 1 bay leaf
- 2 tablespoons lime juice
- 9 ounce package fresh spinach
- 4 cups hot cooked rice (optional)
Orzo with Butternut Squash, Spinach & Blue Cheese

Preheat oven to 425°F. Toss butternut squash with the olive oil
- 2 1/2 cups cubed butternut squash (1/4-inch cubes)
- 1 tablespoon olive oil
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1 cup regular or whole wheat orzo
- 2 cups shredded spinach
- 2 tablespoons olive oil
- 1 clove garlic, minced

In a medium bowl, mix the sugar with the chopped lavender and grated lemon zest
- 1/3 cup sugar
- 1 teaspoon dried lavender blossoms, chopped

- 1 cup (2 sticks) butter, softened
- 1 cup sugar
- 2 egg yolks
- 2 cups (8.5 ounces) flour
- 1/8 teaspoon salt

Tomatillo Gazpacho

Husk and rinse tomatillos
- 2 1/2 pounds fresh tomatillos
- Medium jalapeño pepper
- 2 cloves garlic, halved
- 2 small cucumbers, peeled, seeded & diced (divided)
- 1 cup cold water
- 2 cups cooked corn kernels
- 1/2 cup chopped plum tomatoes
- 2 tablespoons finely chopped red onion
- 2 tablespoons chopped cilantro
- 2 tablespoons lime juice
- 1 teaspoon salt
- 1/2 teaspoon sugar
Ceviche Salsa

Combine the tomatoes, corn, hearts of palm, jalapeño, onion and cucumber
- 2 tomatoes, chopped
- 1 cup grilled corn
- 1/2 can hearts of palm, diced
- 1 jalapeno pepper, diced
- 1/2 red onion, diced
- 1 small cucumber, diced
- 1 avocado, diced
- 1/2 cup cilantro, chopped
- 2 tablespoons lime juice
- 2 teaspoons cumin
- 1 clove chopped garlic
Chocolate Dipped Clementines

Line a large baking sheet with parchment paper
- 6 medium clementines
- 4 ounces dark chocolate, finely chopped
- 1 tablespoon shortening
- 1 tablespoon finely chopped crystalized ginger
- (or you can use coarse sea salt)

In a medium pot, sauté the onion, garlic and curry powder in the butter until onions are clear
- 1 1/2 pounds chicken, cut into 1 inch pieces
- 2 tablespoons butter or olive oil
- 1 small chopped onion
- 1 clove garlic
- 2 tablespoons curry powder
- 3 tablespoons flour
- 1 can (14 ounce) chicken broth
- 1 large apple, peeled, cored and diced
- 1/2 cup cream
Avocado Strawberry Spinach Salad

Toss all ingredients together
- 6 cups fresh baby spinach
- 1 pint strawberries, hulled and sliced
- 1 avocado, diced (or you can double this to 2 avocados!)
- 4 ounces crumbled gorgonzola or blue cheese
- 1/4 cup sliced almonds, toasted
- half a small red onion, thinly sliced
- poppyseed dressing (recipe below)
Chicken grilled w/ cilantro lime butter

In a small bowl, mash the butter, cilantro, lime zest, tabasco, and salt to make a smooth butter
- 2 tbs butter, softened
- 1 1/2 tsp finely chopped cilantro
- 1/2 tsp finely grated lime zest
- 1/4 tsp green tabasco or jalapeno sauce
- kosher salt
- 2 lg. boneless chicken breast
- 2 tbs fresh lime juice
- 1 tbs olive oil
