Bow Tie Pasta with Mushrooms & Spinach

Better Homes & Gardens ~ This is a pasta side dish with no sauce, which was a first for me. It's really good & Cole especially loved it. You could add half & half or cream if you want a little bit of a sauce, just to enough to coat the pasta. I didn't use half & half, but added it to the ingredients to try in the future.
Ingredients
- 6 oz bow tie pasta
- 1 TB olive oil
- 1 medium onion, chopped
- 1 cup sliced portobellos, baby bellas, or other fresh mushrooms
- 2 cloves garlic, minced
- 4 cups thinly sliced fresh spinach
- 1 tsp snipped fresh thyme or 1/2 tsp dried thyme
- 1/8 tsp pepper
- 2 TB shredded Parmesan cheese
- 2 to 4 TB half & half, optional

Preparation
Step 1
Cook pasta according to package directions. In a large skillet, heat oil over medium heat. Add onion, mushrooms, & garlic; cook 3 minutes or until mushrooms are nearly tender. Stir in spinach, thyme, & pepper; cook 1 minute or until spinach is slightly wilted. Stir in cooked pasta, tossing gently to mix. Add cheese. Stir in half & half if using.
