Sizzling Vegetable Sandwiches

- Ingredients
- 1 small eggplant, cut crosswise into 1/2-inch slices
- 1 medium zucchini, cut lengthwise into 1/4-inch slices
- 1 medium yellow summer squash, cut lengthwise into 1/4-inch slices
- 1 medium red sweet pepper, seeded and cut into 1/4-inch strips
- 1 small onion, cut into 1/2-inch slices
- 1/3 cup olive oil
- 4 poppy seed kaiser rolls, split 1/4 cup Cumin Mayo or Easy Cumin Mayo
Meat Loaf- Southern Style

1.Preheat the oven to 350 degrees
- For the sauce:
- 2 lbs lean ground beef
- 1 lb pork-not sausage
- 1 cup tomato sauce or V-8 juice
- 1/2 cup uncooked oats
- 2 eggs, lightly beaten
- 1/4 of a large yellow onion
- 1/2 green bell pepper
- 3-4 cloves garlic
- 2 Tbl Worcestershire sauce
- 1 Tbl hot sauce
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup ketchup
- 1 Tbl Worcestershire sauce
- 1 Tbl hot sauce (or less - make it yours!)
- 1 Tbl honey or brown sugar
Black Eyed Peas Fritters

- Oil, for the deep frying
- 4 cups black eyed peas, fully cooked (canned beans will do every bit as well)
- 2 eggs, beaten
- 1/2 teaspoon salt
- 1/2 tsp pepper
- 1/2 cup all-purpose flour
- 6 medium garlic cloves, finely chopped
- 6 spring onions, finely chopped, with green tops included
- A dash of cayenne
- 1/2 cup fresh parsley, chopped
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- Please note -- If you're making use of canned beans black eyed peas, make sure to drain and always rinse them very well, to eliminate the 'processed' taste.

- One 4-ounce slab deli ham, diced
- Kosher salt and freshly ground black pepper

Chicken Tortilla Soup

Dump everything except toppings and corn tortillas in a large pot
- 2 cups water
- 14 ounce can chicken broth (or 1 1/2 c water and two bouillon cubes)
- 29 ounce can crushed tomatoes
- 11 ounce can enchilada sauce
- 4 ounce can chopped green chilies
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon dried cilantro
- 1 heaping teaspoon minced garlic
- 2-3 cups chicken, cooked and shredded (can use more if you like)
- 2 cups frozen corn (or 2 cans corn, drained)
- 1 small onion, chopped
- salt and pepper to taste
- 4-5 six inch corn tortillas
- Toppings: cheese, sour cream, etc for toppings
