Chop bacon. Set aside. Cook onions in drippings over medium high heat until transparent
- 8 Slices Bacon fried crisp
- 1 C. diced yellow onion
- 2/3 C. Flour
- 6 C. chicken broth
- 4 C. diced peeled baked potato
- 2 C. heavy cream
- 1/4 C. chopped fresh parsley
- 1 1/2 Tsp. Granulated garlic
- 1 1/2 Tsp. Dried basil
- 1 1/2 Tsp. Tabasco
- 1 1/2 Tsp. coarse black pepper
- 1 C. grated cheddar cheese
- 1/4 C. Diced green onion
Italian Wedding Soup

Directions Preheat the oven to 350 degrees F
- For the meatballs:
- Ingredients
- 3/4 pound ground chicken
- 1/2 pound chicken sausage, casings removed
- 2/3 cup fresh white bread crumbs
- 2 teaspoons minced garlic (2 cloves)
- 3 tablespoons chopped fresh parsley leaves
- 1/4 cup freshly grated Pecorino Romano
- 1/4 cup freshly grated Parmesan, plus extra for serving
- 3 tablespoons milk
- 1 extra-large egg, lightly beaten
- Kosher salt and freshly ground black pepper
- For the soup:

- 1 cup minced yellow onion
- 1 cup diced carrots (3 carrots), cut into 1/4 inch pieces
- 3/4 cup diced celery (2 stalks), cut into 1/4 inch pieces
- 10 cups homemade chicken stock
- 1/2 cup dry white wine
- 1 cup small pasta such as tubetini or stars
- 1/4 cup minced fresh dill
- 12 ounces baby spinach, washed and trimmed

Directions Combine flour, sugar, salt, ginger and baking soda; set aside
- TOPPING:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon salt
- 1 teaspoon ground ginger
- 1/2 teaspoon baking soda

- 1/2 cup molasses

Funky Chicken With Sesame Noodles

Directions First make the sesame noodles: Cook the spaghetti according to package directions
- 1 lb spaghettini ( get the thinnest spaghetti you can find)
- 1/2 cup soy sauce
- 1/4 cup sesame oil ( some reviewers have said that 1/2 cup of oil is too much and have halved the amount, so use your own)
- 1/3 cup sugar
- 3 scallions, thinly sliced
- 1/4 cup sesame seeds ( or more)
- 1/4 cup soy sauce
- 1/4 cup teriyaki sauce
- 2 garlic cloves, minced
- 1/4 cup brown sugar
- 1 teaspoon fresh ginger, chopped ( or 1/4 teaspoon dried)
- 4 boneless skinless chicken breasts
- sesame oil, for sauteing
whole wheat Muffins

Preheat oven to 375 degrees and grease a 12 cup muffin pan
- 1/2 cup Melted Butter
- 2 1/2 cups whole wheat flour
- 3/4 - 1 cup Sugar
- 2 tsp. Baking Powder
- 1/2 tsp. Baking Soda
- 1/4 tsp. Salt
- 1 cup mashed or pureed Fruit(Banana,sweet potato.apple,zucchini, cooked or canned)

Whisk together the juice, zest, sugar, and eggs in a 2-quart heavy saucepan
- 1 cup fresh lemon juice
- Zest of 2 lemons
- 1 cup sugar
- 6 large eggs
- 12 tablespoons (1 1/2 sticks) unsalted butter, cut into bits
- Serving suggestion: Use the lemon curd as a filling in tart shells, pies, cookies, cakes, or pastries. May be used as a topping for toast and scones, too!
