Tamale Pie

Cook onion and green pepper til tender
- Cornmeal topper:
- 1/2 C chopped onion
- 1 # ground beef
- 1 1/2 C whole kernel corn
- 1/2 C chopped ripe olives
- 1 clove garlic (or dried minced)
- 1 t salt
- dash pepper
- 1/2 C chopped green pepper
- 2- 8 oz. cans seasoned tomato sauce
- 1 T sugar
- 2-3 t chili powder
- 1 1/2 C shredded cheddar cheese
- green chilis (optional)
- 3/4 C yellow corn meal
- 2 C cold water
- 1/2 t salt
- 1 T butter
Rhubarb Crunch

1. Preheat oven to 375 degrees
- 3 Cups diced rhubarb
- 1 Cup white sugar
- 3 Tablespoons flour
- 1 Cup brown sugar
- 1 Cup quick oatmeal
- 1 1/2 Cups flour
- 1 Cup butter
Cheesy Chicken and Broccoli Bake

Preheat oven to 350ºF. Chop pepper, broccoli, water chestnuts, onion and chicken
- 1/2 cup peppers, chopped
- 1/2 cup broccoli, chopped
- 1/4 cup water chestnuts, drained and chopped
- 1/4 cup onion, chopped
- 6 oz. cooked chicken breast, chopped
- 1 can cream of chicken soup
- 1 cup shredded Cheddar cheese
- 2 (8 oz.) pkg. refrigerated crescent rolls
Vegetable Garden Soup-Weight Watchers

Spray a large saucepan with nonstick cooking spray, and heat
- 1/2 cup carrots, sliced
- 1/4 cup onions, diced
- 2 garlic cloves, minced
- 3 cups fat-free beef, chicken or vegetable broth
- 1 cup green cabbage, diced
- 1 cup spinach, chopped
- 1 tbsp tomato paste ( or can diced tomatoes)
- 1/2 tsp dried basil
- 1/4 tsp dried oregano
- 1/4 tsp salt
- 1 cup zucchini, diced
- Wildtree spaghetti seasoning mix to taste
Upside Down Rhubarb Dessert

Put rhubarb in greased 9 X 13 pan
- 5 C cut up rhubarb
- 3 C small marshmallows
- 1 3oz jello (strawberry, cherry, etc.)
- 1/2 C sugar
- 1 white cake mix (prepared according to pkg directions.
Beef Enchilada Casserole

Preheat oven to 350 degrees
- Southwest Seasoning:
- Beef Enchilada Casserole
- 1 pound lean ground beef
- 1 onion, finely chopped
- 8 ounces corn
- 1 can enchilada sauce
- 1 tablespoon Southwest seasoning mix (recipe below)
- 3/4 cup water
- 1/2 cup medium thick and chunky salsa
- 6 large flour tortillas or 12 yellow corn tortillas
- 1/4 cup fresh cilantro (optional)
- 1 cup shredded cheese
- Makes one cup of seasoning
- 1/4 cup chili powder
- 1/4 cup onion powder
- 2 tablespoons ground cumin
- 2 tablespoons ground coriander or dried cilantro
- 2 tablespoons dried oregano
- 2 tablespoons dried basil
- 1 tablespoon dried thyme
- 1 tablespoon garlic powder
- dash of dill
Lemon Pie Filling

Pour pie filling into cooked pie crust
- Pie Filling:
- Mix together:
- 1/2 C cold water
- 5 T cornstarch
- Combine and bring to boil, then add to above mixture.
- 1 1/2 C hot water and 1 1/4 C sugar
- Cook until thick
- Add and cook a few minutes:
- 3 egg yolks, beaten
- Add:
- juice and rind of 1 lemon and 1 T butter. Cool.
- Meringue:
- 3 egg whites
- 1/4 C sugar
Bacon Breakfast Enchiladas

Recipes Makes: Directions In a skillet over medium high heat, brown sausage and then drain fat
- 1 lb sausage (optional)
- 2 c shredded cheddar cheese
- 8 (8 inch) flour tortillas
- 6 eggs
- 1 T all-purpose flour
- 2 c half-and-half
- 1/2 tsp salt
- 3 oz (or more) of Cooked Bacon/Bacon Bits
Taco Ring

In skillet, brown meat. Add taco seasoning and water according to package directions
- 2 lbs ground beef or turkey
- 2 pkgs of taco seasoning
- 1 1/2 cup water
- 2 cans of crescent rolls

- Garnish if desired

Coffee Cake

Stir all ingredients (except pie filling) with spoon
- 1 white cake mix
- 1 C sour cream
- 3 eggs
- 2 T oil
- 1 pkg instant pudding (vanilla)
- can pie filling (peach/apricot/apple etc)
