Ellie's Pork Chop Marinade

Combine all ingredients. Mix Well
- 1 1/2 cups salad oil
- 3/4 cup soy sauce
- 1/4 cup Worcestershire sauce
- 2 teaspoons dry mustard
- 1 tablespoon black pepper
- 1 1/2 teaspoons dry parsley flake
- 1 large onion
- 1/3 cup lemon juice
- 2 1/4 teaspoons salt
- 1/2 cup wine vinegar
- 2 cloves garlic, crushed
- 1/4 cup ketchup
Tilapia Piccata

Serves 4
- 4 Tilapia or other sustainable flaky white fish fillets (1 3/4 pounds total)
- salt & pepper
- 1 cup of flour for derdging
- 4 TBL olive oil
- 4 TBL butter
- 2 lemons -1 sliced, 1 juiced, about 3 TBL
- 1 large clove shallot, finely chopped
- 2 large cloves garlic, finely chopped
- 1/2 cup dry white wine or dry vermouth
- 2 TBL capers, drained
- A handful flat-leaf parsley, chopped (about 2 TBL)
Italian Pork Stew

Heat oil in dutch oven. Cook garlic in oil until golden, discard garlic
- 3 tablespoons oil
- 2 cloves garlic, crushed (optional)
- 2 pounds lean boneless pork
- 2 medium carrot, diced
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- 1 1/2 teaspoons salt
- 1/4 teaspoon white pepper
- 1 cup dry white wine
- 1 cup chicken broth
- 2 medium green peppers
- 1 can Italian tomatoes, 16 oz.
Guacamole

1. Cut the avocados in half, remove the pit and scoop the flesh into a medium-size bowl
- 2 ripe avocados
- 1 tablespoon lime juice
- 1/4 cup minced onion or shallot
- 1 large clove of garlic, minced
- 1 jalapeño pepper, seeded and minced
- 1/4 teaspoon chili powder
- 3/4 teaspoon coarse salt
- Freshly ground pepper, to taste
- 1/4 cup seeded and diced tomato (optional)
Olive Garden Salad Dressing

- 1/2 C. mayonnaise
- 1/3 C. white vinegar
- 1 tsp. vegetable oil
- 2 Tbsp. corn syrup
- 2 Tbsp. Parmesan cheese
- 2 Tbsp. Romano cheese
- 1/4 tsp. garlic salt
- 1/2 tsp. Italian seasoning
- 1/2 tsp. parsley flakes
- 1 Tbsp. lemon juice
Southwestern Soup

Spray large saucepan with cooking spray; heat over medium heat
- PAM® Original No-Stick Cooking Spray
- 3/4 pound lean ground turkey
- 2 cups frozen Southwest mixed vegetables (corn, black beans, red peppers)
- 2 cans (8 oz each) Hunt's® Tomato Sauce-No Salt Added
- 2 cups reduced-sodium chicken broth
- 1 can (10 oz each) Ro*Tel® Mild Diced Tomatoes & Green Chilies, undrained
- 1/2 teaspoon taco seasoning mix (from 1.25-oz pkg)

- 1 cup dried multi-bean mix or Great Northern beans, picked over and rinsed
- 1/2 cup pearl barley
- 3 cloves garlic, smashed
- 2 medium carrots, roughly chopped
- 2 ribs celery, roughly chopped
- 1/2 medium onion, roughly chopped
- 1 bay leaf
- Kosher salt
- 2 teaspoons dried Italian herb blend
- Freshly ground black pepper
- 1/2 ounce dried porcini mushrooms, crumbled if large, optional
- One 14-ounce can whole tomatoes, with juice
- 3 cups cleaned baby spinach leaves (about 3 ounces)
