Buttercream Frosting

- And I am loving Magnolia’s Vanilla Buttercream frosting. My only modification to the recipe is I like to add a little almond extract, and it seems that 1 tsp. is the perfect amount! And be sure to use CLEAR vanilla extract to get a white frosting.
- Makes enough for one 2-layer 9-inch cake or 2 dozen cupcakes*
- ◾1 cup (2 sticks) unsalted butter, softened
- ◾6 to 8 cups confectioners’ sugar
- ◾1/2 cup milk
- ◾2 teaspoons vanilla extract
Mac and Cheese Italian Style

- 4 tablespoons unsalted butter
- 1/4 cup all purpose flour
- 2 cups 2% milk
- 1 pound mini penne pasta
- 8 ounces of Italian blend shredded cheese (I prefer Kroger brand)
- 1/3 cup fresh grated parmesan
- 1 tablespoon Italian seasoning (I prefer McCormick Tuscan Style Italian Seasoning)
Breaded Ranch Chicken

Preheat oven to 350°. Place the butter in a wide, shallow bowl
- 8 boneless skinless chicken breast halves
- 1/2 Cup butter, melted (1 stick)
- 3/4 Cup crushed cornflakes
- 3/4 Cup grated Parmesan cheese
- 2 TB. BUTTERMILK RANCH DRESSING MIX
Pumpkin Pie Muffins from leftover pie filling

- 1 1/4 cups leftover pumpkin pie filling (this is how much I had leftover)
- 1/4 cup brown sugar

- frosting:
- 1/4 cup softened butter
- 1/4 cup coconut oil*
- 1/3 cup + 1 tablespoon granulated sugar**
- 1 tablespoon molasses
- 1 teaspoon vanilla
- 1 egg
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup grated carrot
- 1/4 cup pecans + more for garnish, if desired
- 2 oz. softened cream cheese

- 2 TB. MINCED LEMON PEEL (or 1/4 Cup freshly grated lemon zest)
- 2 TB. PURE VANILLA EXTRACT
- 5-1/2 Cups flour
- 5 tsp. baking powder
- 1/2 tsp. salt
- 1 Cup butter (2 sticks)
- 1 Cup white sugar
- 4 large eggs
