- 1 pound pork sausage
- 1 cup dry bread crumbs
- 1 clove garlic, minced
- 1 (32 ounce) jar spaghetti sauce
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
Sticky Sesame Wings

Heat oven to 425°F. Line a large shallow baking pan with foil and lightly oil it
- 3 pounds chicken wingettes or chicken wings (see note up top)
- 1 large garlic clove, minced
- 1 teaspoon coarse or kosher salt, plus more to taste
- 2 tablespoons soy sauce
- 2 tablespoons hoisin sauce
- 2 tablespoons mild honey (I often halved this)
- 1 teaspoon Asian sesame oil
- Pinch of cayenne or dash of Sriracha
- 1 1/2 tablespoons sesame seeds, lightly toasted
- 1 scallion, finely chopped

- 12 sugarcane swizzle sticks, each cut into about 3-inch pieces
- 1 hickory smoked ham, spiral sliced, 8 to 10 pounds (no bone, water added, cooked)
- 1 cup light brown sugar, firmly packed
- 1 cup Steens 100 percent Pure Cane Syrup
- 1/2 cup dark molasses
- 1/2 cup dark corn syrup
- 1/8 teaspoon nutmeg, freshly grated
- 1/4 teaspoon ground cloves
- 1/8 teaspoon ground allspice
- 1/2 teaspoon ground cinnamon
- 1 teaspoon dry mustard
- 1/4 cup water
- 1 1/2 pounds (about 4) Granny Smith apples
- 1 1/2 pounds (about 4) Bartlett pears
Kentucky Fried Chicken Copycat

Combine the egg and buttermilk in a large bowl
- 1 large egg, beaten
- 1 cup buttermilk
- One 3-pound chicken, cut into 6 pieces
- 1 cup all-purpose flour
- 1 teaspoon ground oregano
- 1 teaspoon chili powder
- 1 teaspoon dried sage
- 1 teaspoon dried basil
- 1 teaspoon dried marjoram
- 1 teaspoon pepper
- 2 teaspoons salt
- 2 tablespoons paprika
- 1 tablespoon onion salt
- 1 teaspoon garlic powder
- 2 tablespoons Accent (MSG seasoning)
- 1 can lard (or one 3-pound can Crisco), enough to cover chicken in fryer (see Secret Recipe Tips below)
- For crispier chicken, use Crisco instead of lard and double-coat the chicken with the flour mixture.

- 2 tablespoons olive oil, divided, plus more for drizzling
- 1/2 cup dry white wine, divided
- 3 dozen littleneck clams, scrubbed, divided
- 3 slices thick-cut bacon, finely chopped
- 1 large Spanish onion, thinly sliced
- 1 small shallot, thinly sliced
- 1 garlic clove, thinly sliced
- Kosher salt and freshly ground black pepper, to taste
- 1/2 cup dry white wine
- 5 cups corn kernels (about 5 ears corn)
- 2 cups heavy cream
- 1 cup water
- 1 jalapeño, halved and seeded
- 1/2 teaspoon cayenne pepper
- 2 teaspoons granulated sugar
- 3 thyme sprigs
- 1 rosemary sprig
- 1 bay leaf
- 1 large russet potato, peeled and cut into 1/2-inch cubes
- 1 tablespoon finely chopped parsley
- 1 tablespoon finely chopped chives
