Tommy's Crêpe's

For the crêpe batter, combine the flour, sugar and salt in a mixing bowl
- Crêpe Batter:
- 1/2 cup all-purpose flour
- 2 tablespoons sugar
- Pinch salt
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 2 tablespoons Grand Marnier
- 1 teaspoon orange zest
- 1 teaspoon lemon zest
- 3 tablespoons unsalted butter, lightly browned and cooled
- 1/2 - 3/4 cup milk
Instant Pot Autumn Mash

One of my all-time favorite Thanksgiving side dishes is Roasted Garlic Autumn Root Vegetable Mash
- 1 head roasted garlic (you can also “roast” the garlic in an Instant Pot by following this recipe)
- 4 tablespoons ghee, divided
- 1/2 onion, coarsely chopped
- 3/4 pound parsnips (or about 5 small parsnips), peeled and coarsely chopped
- 1 pound carrots (or about 2 large carrots), peeled and coarsely chopped slightly smaller than parsnips
- 1 1/2 pounds cauliflower florets (or 1 small head of cauliflower), coarsely chopped
- Diamond Crystal brand kosher salt
- 1/2 cup bone broth or organic chicken broth
- Freshly ground pepper
- Minced chives (optional)
My Best Ever Tuna casserole

Cook the pasta to desired doneness, I always take it 1 minute longer than the directions on the box say
- 1/2 lb. Barilla Whole Wheat Medium Shells
- 1 Tbsp. Olive Oil
- 4 Tbsp. Butter
- 1 C. minced Onion
- 1 C. minced Celery
- 1/2 C. minced Red Bell Pepper
- 1 Tbsp. Flour
- 1/2 C. Dry White Wine (like a Pinot Grigio or Sauvignon Blanc, something you would drink, NOT cooking wine, EVER)
- 1/2 C. Chicken broth
- 1 C. Half and Half
- 1 C. frozen Peas
- 2 seven ounce cans of Tuna, drained and flaked
- 1 1/2 C. Bread Crumbs (make your own, fresh is better then that stuff in a can)
Honey Butter Biscuits

Place flour, baking powder, sugar, salt, cream of tarter in a mixing bowl
- 2 cups flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons sugar
- 1/2 cup vegetable shortening
- 1 teaspoon cream of tartar
- 2/3 cup whole milk
- 4 tablespoons butter (melt in small pan and set aside)
- 1/3 cup honey
Chicken Noodle Casserole

In a large bowl, combine the soup, mayonnaise and lemon juice
- 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 2 cups cubed cooked chicken
- 1 small onion, chopped
- 1/4 cup chopped green pepper
- 1/4 cup chopped sweet red pepper
- 1 cup shredded Monterey Jack cheese, divided
- 1 cup shredded sharp cheddar cheese, divided
- 12 ounces egg noodles, cooked and drained
Rhubarb-Pineapple Crisp

In a large bowl, combine the rhubarb, pineapple, 1/4 cup sugar and 2 tablespoons flour
- 2 cups sliced fresh or frozen rhubarb, thawed and drained
- 1 can (20 ounces) unsweetened pineapple tidbits, drained
- 1/2 cup sugar, divided
- 2 tablespoons plus 1/3 cup all-purpose flour, divided
- 1/3 cup quick-cooking oats
- 3/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/4 cup cold butter
- Whipped cream, optional
SUPER SHEPHERD'S PIE

Peel and cut potatoes; cook in salted water until tender, about 20 minutes, drain
- 1 1/2 lb. lean ground beef
- 6-7 medium potatoes (about 6-7 cups raw, chopped)
- 3 carrots chopped (about 2/12 cups raw, chopped)
- 1 onion chopped (about 1 cup)
- 1 clove minced garlic
- 1 cup frozen corn
- 1 cup frozen green beans (optional)
- 1 cup frozen peas
- 1 tbsp. tomato paste
- 1 tsp. thyme
- 6 tbsp. butter
- 1/2 cup milk
- 1 tsp. salt
- 1 tsp. ground black pepper
- 1 package beef gravy mix prepared as per instructions
- 1 cup cheddar cheese shredded (optional)
Morning Glory Muffins

Preheat oven to 375 degrees F (190 degrees C)
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 1/4 cups white sugar
- 1 tablespoon ground cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups grated carrots
- 1 apple - peeled, cored, and chopped
- 1 cup raisins
- 1 egg
- 2 egg whites
- 1/2 cup apple butter
- 1/4 cup vegetable oil
- 1 tablespoon vanilla extract
- 2 tablespoons chopped walnuts
- 2 tablespoons toasted wheat germ
Baked Ham with Cherry-Pomegranate Glaze & Pan Sauce

Position a rack in the lower third of the oven and heat the oven to 325°F
- 1 half-ham, preferably bone-in (7 to 9 lb.)
- 1-1/4 cups pomegranate juice
- 1/2 cup cherry preserves
- 2 Tbs. Dijon mustard
- 1/4 cup kirschwasser or other cherry liqueur
- 1/4 cup sweetened dried tart cherries
- 1 Tbs. cornstarch mixed with 3 Tbs. water

- 6 ears sweet corn
- 1/2 cup milk
- 1/2 cup heavy cream
- 1/2 cup white cheddar cheese, shredded
- 1/2 teaspoon cayenne pepper
- 2 eggs, beaten
- Salt and freshly ground black pepper
