Lemon Sponge Cake: The first step should be to make the meringue which gets folded into the cake batter
- 1 3/4 c. cake flour
- 1 Tablespoon baking powder
- 1 tsp. salt
- 1/2 c. sugar.
- 1/2 c. vegetable oil

- 3/4 c. water
- 1 Tablespoon lemon zest
- 1/2 tsp. cream of tartar
- 3/4 c. sugar
- 6 egg whites
- 1 c. heavy cream

- 2 1/2 c. powdered sugar
- 3 T lemon juice.
7 Cheese Mac and Cheese

Preheat the oven to 325 degrees F
- 2 pounds elbow macaroni
- 12 eggs
- 1 cup cubed Velveeta cheese
- 1/2 pound (2 sticks) butter, melted
- 6 cups half-and-half, divided
- 4 cups grated sharp yellow Cheddar, divided
- 2 cups grated extra-sharp white Cheddar
- 1 1/2 cups grated mozzarella
- 1 cup grated Asiago
- 1 cup grated Gruyere
- 1 cup grated Monterey Jack
- 1 cup grated Muenster
- 1/8 teaspoon salt
- 1 tablespoon black pepper
Vegetable Lover's Chicken Soup

Heat oil in a large saucepan over medium-high heat
- 1 tablespoon extra-virgin olive oil
- 8 ounces chicken tenders, cut into bite-size chunks
- 1 small zucchini, finely diced
- 1 large shallot, finely chopped
- 1/2 teaspoon Italian seasoning blend
- 1/8 teaspoon salt
- 2 plum tomatoes, chopped
- 1 14-ounce can reduced-sodium chicken broth
- 1/4 cup dry white wine
- 2 tablespoons orzo or other tiny pasta, such as farfelline
- 1 1/2 cups packed baby spinach
ROASTED GARLIC SOUP WITH ROSEMARY ROASTED POTATOES

Place a rack in the center and upper third of the oven and preheat to 350 degrees F
- For the Roasted Garlic:
- 26 garlic cloves (unpeeled)
- 2 tablespoons olive oil
- salt and pepper
- For the Potatoes:
- 2 Russet potatoes, cut into large bite-size chunks
- or
- 12 small new or purple potatoes, or a mixture!
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- salt and pepper
- For the Soup:
- 2 tablespoons olive oil
- 2 medium yellow onions, sliced into half rings
- 2 teaspoons fresh thyme, chopped
- 15 to 18 garlic cloves, peeled but kept mostly whole
- 4 cups chicken stock (vegetable stock will also work)
- 1/2 cup Greek yogurt, milk, or half and half, or heavy cream
- salt and pepper to taste
- lemon wedges, Parmesan cheese, and good olive oil for drizzling

Combine all slaw ingredients in a medium-sized bowl
- 4 slices marble rye bread
- 2 slices butter lettuce
- 2 oz. turkey
- 1 oz. white cheddar cheese, sliced
- Walnut, Cranberry & Apple Slaw
- 1/2 c. sliced cabbage
- 1/4 c. dried cranberries
- 1/4 c. walnuts, chopped
- 1/4 red delicious apple, chopped
- Dressing
- 1/4 c. plain greek yogurt
- 1 tbsp. fresh squeezed lemon juice
- 1 tsp. apple cider vinegar
- 1 tsp. raw organic honey
