  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Reserved corn kernels from making stock
  • 1 teaspoon kosher salt

  • 2 russet Burbank potatoes, peeled, diced small
  • Additional salt, pepper, cumin and coriander as desired
