Bring a large pot of lightly salted water to a boil
- 6 ounces dry fettuccine pasta
- 1 (8 ounce) package cream cheese
- 6 tablespoons butter
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- salt and pepper to taste
- 2 skinless, boneless chicken breast halves - cooked and cubed
- 2 cups chopped fresh broccoli
- 2 small zucchini, julienned
- 1/2 cup chopped red bell pepper

Heat olive oil in saute pan over medium heat
- Creamed Spinach:
- 2 teaspoons olive oil
- 1 (6 ounce) package baby spinach leaves
- 1 tablespoon butter
- 1 tablespoon minced shallots
- 1/2 teaspoon nutmeg
- 2 tablespoons heavy cream
- 1/8 teaspoon salt
- Pinch of black pepper
- Béarnaise Sauce:
- 1 tablespoon butter
- 2 tablespoons minced shallots
- 1 tablespoon white wine vinegar
- 1 egg yolk
- 1 tablespoon lemon juice

1. Heat oil in a heavy stockpot over medium-high heat
- 1 teaspoon olive oil
- 1 cup onion, diced
- 1 (4-ounce) can chopped green chiles, undrained
- 2 garlic cloves, minced
- 1 1/2 teaspoons ground cumin
- 2 (15-ounce) cans great Northern beans, drained and rinsed
- 3 1/2 cups reduced-sodium chicken broth
- 2 cups cooked chicken, chopped (rotisserie chicken may be used)
- 1 cup grated monterey jack cheese, divided
- 1 cup grated colby cheese, divided
- Toppings: Crushed corn chips, sour cream, chopped green onions, olives, chopped tomatoes, oyster crackers, cilantro, crumbled bacon

Irish Soda Bread

Preheat the oven to 375 degrees F
- 4 cups all-purpose flour, plus extra for currants
- 4 tablespoons sugar
- 1 teaspoon baking soda
- 1 1/2 teaspoons kosher salt
- 4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
- 1 3/4 cups cold buttermilk, shaken
- 1 extra-large egg, lightly beaten

White Seafood Lasagna

Preheat oven to 350°. Cook lasagna noodles according to package directions; drain
- CHEESE SAUCE:
- 9 uncooked lasagna noodles
- 1 tablespoon butter
- 1 pound uncooked shrimp (31-40 per pound), peeled and deveined
- 1 pound bay scallops
- 5 garlic cloves, minced
- 1/4 cup white wine
- 1 tablespoon lemon juice
- 1 pound fresh crabmeat
- 1/4 cup butter, cubed
- 1/4 cup all-purpose flour
- 3 cups 2% milk
- 1 cup shredded part-skim mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Dash ground nutmeg
- RICOTTA MIXTURE:
- 1 carton (15 ounces) part-skim ricotta cheese
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 1 cup shredded part-skim mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup seasoned bread crumbs
- 1 large egg, lightly beaten
- TOPPING:
- 1 cup shredded part-skim mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Minced fresh parsley
Mexican Chicken Soup

Preheat oven to 350 degrees F (175 degrees C)
- 1 1/4 pounds skinless, boneless chicken breast halves
- 2 tablespoons taco seasoning mix
- 1 tablespoon vegetable oil
- 1/2 cup chopped onions
- 1/2 cup chopped celery
- 2 teaspoons ground cumin
- 1/4 teaspoon ground black pepper
- 1 cup water
- 3 (14 ounce) cans chicken broth
- 1 cup diced tomatoes
- 1 tablespoon chopped fresh cilantro
- 1 cup shredded Cheddar cheese
- 1 cup crushed tortilla chips
- 1 avocado - peeled, pitted and diced
Bove's All Natural Lasagna

Before starting the lasagna, I usually take 2-3 jars of my Marinara sauce and pour it into a pot
- 2 jars Bove's Marinara Sauce (or try the Vodka Sauce)
- 3/4 lb. lasagna noodles (about 24 pieces. Don't forget to criss-cross your noodles.)
- 1/3 lb. thinly sliced Mozzarella cheese
- 2 Tbs. fresh chopped Italian parsley
- 3/4 lb. Ricotta cheese
- 2 Tbs. olive oil
- 1/2 lb. grated Parmesan cheese salt
- 2 - 1 lb. bags of Bove's famous meatballs
- 3/4 cup of Cottage cheese
Shrimp Etouffee

1. Heat a large Dutch oven or stock pot over medium heat, then add in the oil and flour
- 3 Tbsp peanut oil
- 3 Tbsp all purpous flour
- 1 large yellow onion, peeled and chopped
- 1/2 large green bell pepper, seeded and chopped
- 3 celery stalks, chopped
- 4 cloves garlic, peeled and chopped
- 3 oz tomato paste
- 1 1/4 cup beef broth, reduced sodium
- 1 1/4 cup white wine - dry or semi dry
- 4 bay leaves
- 1 tsp chopped fresh basil
- 1 tsp chopped fresh thyme
- 2 Tbsp hot sauce - favorite variety
- 1 tsp salt
- 5 sticks green onions, chopped
- 2 lb p&d 31-36 shrimp
- 1/4 c fresh chopped parsley
- cooked white or brown rice
