Portobello Mushroom Burgers

Place the mushroom caps, smooth side up, in a shallow dish
- 4 portobello mushroom caps
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 tablespoon minced garlic
- salt and pepper to taste
- 4 (1 ounce) slices provolone cheese

- 1/2 cup light brown sugar
- 1 fresh orange zested, juiced
- 1 Tbsp dark rum
- 1/2 cup vanilla extract

To make the pasta, bring a large pot of water and the salt to a boil over high heat
- For the pasta:

- 3 ounces smoked tofu, minced to roughly resemble bacon bits
- 1 large onion, diced

- 2 tablespoons fresh thyme leaves
- Sea salt and freshly ground pepper
- For the sauce:
- 3 cups unsweetened soy milk
- 4 to 6 sprigs fresh thyme
- 4 garlic cloves, peeled and smashed
- 3 tablespoons unsalted vegan buttery spread
- 3 tablespoons all-purpose flour
- 1 cup Savory Soy Cream (recipe below)
- Sea salt and freshly ground pepper
- 5 cups (22.5 ounces) shredded vegan mozzarella or cheddar cheese (such as Daiya brand), divided
- 2 teaspoons crushed red pepper flakes
- 1/2 cup panko (Japanese bread crumbs)
- Savory Soy Cream
- Makes about 3 cups

- 2 cups cooked chicken, shredded or thinly sliced
- 1 cup carrots, grated
- 1 yellow or green bell pepper, thinly sliced

- 3 tablespoons soy sauce
- 2 tablespoons honey
- 2/3 cup creamy peanut butter
- 1 tablespoon chili sauce
- 1/2 lime, juiced
- 32 ounces chicken stock
- 1 1/2 cups water
- 1 tablespoon olive oil

- 1/2 cup red wine
