Salmon Cakes From Scrath
- 2/3 cup panko (Japanese breadcrumbs), divided
- 1 tablespoon minced fresh flat-leaf parsley
- 2 tablespoons finely chopped green onions
- 2 tablespoons canola mayonnaise
- 1 teaspoon lemon juice
- 1 teaspoon Dijon mustard 1/2 teaspoon Old Bay seasoning 1/2 teaspoon Worcestershire sauce
- 1/8 teaspoon kosher salt 1/8 teaspoon ground red pepper 1 large egg, lightly beaten 8 ounces cooked, flaked salmon 1 tablespoon olive oil
- 1 lemon, quartered
Incredible Roasted Shoulder of Lamb with Smashed Vegetables and Greens

Directions For the lamb: Preheat your oven to full whack, (450 to 500 degrees F)
- 1 (2.2-pound) shoulder of lamb
- Olive oil
- Sea salt and freshly ground black pepper
- 1 large bunch fresh rosemary
- 1 bulb garlic, unpeeled, broken into cloves
- 1 1/2 pounds peeled potatoes, cut into large chunks
- 3 large carrots, peeled and cut into small chunks
- 1/2 a large rutabaga, peeled and cut into small chunks
- 6 tablespoons butter
- 1 tablespoon all-purpose flour
- 2 cups good-quality hot chicken or vegetable stock
- 2 heaped tablespoons capers, soaked, drained and chopped
- 1 large bunch fresh mint, leaves picked
- 2 tablespoons red wine vinegar
- 1 pound lovely greens, such as white cabbage, savoy cabbage, Brussels sprouts tops
- or cavolo nero, leaves separated, stalks finely sliced

- Glaze ingredients:
- 2 cups cake flour
- 1/2 tsp. salt
- 2 tsp. baking powder
- 2 eggs
- 1/2 cup canola oil
- 1 1/3 cups sugar
- 2 TB lemon juice
- 1/2 cup buttermilk
- zest of 1 lemon
- 1 cup grated zucchini
- 1 cup powdered sugar
- 2 TB lemon juice
- 1 TB milk

- 7 ounces thin spaghetti
- 1 -2 tablespoon olive oil
- 1/2 onion, slivered
- 1 red bell pepper, cored and slivered
- 8 ounces mushrooms, sliced
- 7 ounces pesto sauce

- Cooked Mild Italian Chicken Sausage (Meat Dept), sliced on the bias in 1/4-inch pieces
- 1 pkg (7 oz) Food You Feel Good About Chopped Onions
- 1 pkg (7 oz) Food You Feel Good About Sunrise Blend with Quinoa Flakes
- 1 can (14.5 oz) Italian Classics Petite Diced Tomatoes with Garlic, Olive Oil, and Seasoning
- 1/2 cup water
- 1/2 of a 16 oz pkg Food You Feel Good About Uncooked Peeled & Deveined Shrimp from Belize, thawed, patted dry (about 20 pieces)

- 1 1/2 loaves French Bread, cut into cubes
- 4 oz. cream cheese
- 1 tablespoon milk
- 1/2 cup powdered sugar
- 1 cup blueberries
- 1 cup milk
- 5 eggs
- 2 teaspoons vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup maple syrup
- For the Blueberry Syrup
- 1 cup cold water
- 2 tablespoons corn starch
- 1/2 cup sugar
- 1 cup blueberries

- 1 box (8 oz.) GOYA® Yellow Rice
- 2 medium tomatoes, cored, seeded and finely chopped (about 1 cup)
