Chocolate Cake with Chocolate Cream Frosting

From "The Essence of Chocolate"
- For the frosting:
- 1 3/4 cups sugar
- 1 1/2 cups heavy cream
- 7.5 oz. unsweetened chocolate, chopped finely
- 12 Tbsp. unsalted butter, cut into small pieces
- 1 1/2 tsp. vanilla
- For the cake:
- 3 cups sugar
- 3 scant cups flour
- 1 cup + 2 Tbsp. Dutch processed cocoa
- 1 1/2 tsp. salt
- 2 1/4 tsp. baking powder
- 2 1/4 tsp. baking soda
- 3 eggs
- 3/4 cup oil
- 1 1/2 cups whole milk
- 1 1/2 cups hot coffee
Picnic Banana Pudding

In a large bowl, beat cream cheese with an electric mixer on medium until smooth and fluffy
- 1 8-oz. block cream cheese, softened
- 1 14-oz. can sweetened condensed milk
- 1 5oz. pkg. instant vanilla pudding
- 3 cups milk
- 2 tsp. vanilla
- 1 16-oz. tub cool whip, thawed
- 1 11-0z. box Nilla wafers
- 5-7 bananas, peeled and sliced
Simple Crockpot Stew

- 1- 1 1/2 lbs. stew meat
- 1 pkg. baby carrots
- 8-10 medium size potatoes cut into chunks
- 1 onion, quartered
- 3 pkg. brown gravy mix
- 1 pkg. Ranch dressing mix
- 3 cups water
Broccoli Pasta Salad

Southern Latkes

- Herbed Sour Cream:
- 1 pound russet potatoes, peeled and coarsely grated
- 1/2 pound sweet potatoes, peeled and coarsely grated
- 1/2 cup grated Vidalia onion
- 1/3 cup flour
- 1 large egg
- 1 tsp. Kosher salt
- 1/4 tsp. pepper
- 1/4 cup canola oil, divided
- 1 cup sour cream
- 1/4 cup chopped fresh dill
- 1 tbsp. lemon juice
- 1/2 tsp. Kosher salt
- 1/8 tsp. pepper
Double Chocolate Ice Cream
