Cowboy Caviar

Combine all vegetables, except avocado
- Dressing:
- 1 can black eye peas, drained
- 1 can black beans, drained
- 3/4 cup frozen corn, thawed
- 3 green onions
- 1/2 cup chopped bell pepper
- 2-3 tomatoes, diced
- 10 jarred jalapeno slices, diced
- 1/3 cup cilantro, chopped
- 1 ripe avocado
- 1 tbsp. olive oil
- 1 tbsp. white vinegar
- 1/2 lime, juiced
- 1/2 tsp. Dijon mustard
- Salt - pepper
Salted Carmel Pretzel Bark

Preheat oven to 400. Line a large baking sheet with parchment paper
- 2 sticks butter
- 1 cup light brown sugar
- 1 bag of mini pretzels (will use about 1/2 of the bag)
- 12 oz. chocolate chips (milk choc., dark choc. or semi-sweet)
- Sea salt
Double Chip Cookies

- 1 cup butter
- 1 1/4 cups brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 egg yolk
- 1 tsp. vanilla
- 2 cups flour
- 1 cup uncooked rolled oats
- 1/2 tsp. baking soda
- 1/2 tsp. kosher salt
- 1/4 tsp. cinnamon
- 1 cup white chocolate chips (extra for garnishing, if desired)
- 1 cup semi-sweet chocolate chips (extra for garnishing, if desired)
- 1 cup roughly chopped, toasted pecans (extra for garnishing)
Apricot and White Chocolate Scones

1 Heat oven to 400°F. Lightly grease cookie sheet with shortening or cooking spray
- 1 3/4 cups Gold Medal™ all-purpose flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/3 cup firm butter or margarine
- 1/3 cup finely chopped dried apricots
- 1/3 cup white vanilla baking chips
- 1 egg
- 1/3 About 1/3 cup half-and-half
- 1/3 cup white vanilla baking chips, melted
Grape Salad

Blend cream cheese and sugar; add sour cream and vanilla
- 16 oz. sour cream
- 16 oz. cream cheese
- 1 cup sugar
- 1/2 tsp. vanilla
- 4 lb. green seedless grapes
- 4 lbs. red seedless grapes
- 3-4 cups pecans
- 1 qt. strawberries
Low Calorie Cheesecake Pudding

Mix all ingredients in a blender or food processor
- 2 cups Chobani yogurt
- 1 Pkg. fat free Jello cheesecake or White Chocolate pudding
- 3 tsp. Stevia
- 1/2 cup Almond milk
Crispy Baked Potatoes

Thoroughly wash potatoes. Slice vertically almost to the bottom of the potato, until entire potato is sliced
- 4 large baking potatoes

- 2-4 tbsp. olive oil

Hearty Meatless Minestrone Recipe

In a Dutch oven, saute onion in oil for 2 minutes
- 1 large onion, chopped
- 3 tablespoons olive oil
- 2 celery ribs, chopped
- 2 medium carrots, chopped
- 1 cup chopped cabbage
- 1 medium green pepper, chopped
- 1 medium zucchini, chopped
- 6 garlic cloves, minced
- 3-1/2 cups water
- 2 cans (14-1/2 ounces each) diced tomatoes, undrained
- 1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
- 1 can (15 ounces) tomato puree
- 1 can (8 ounces) tomato sauce
- 3 tablespoons dried parsley flakes
- 2 teaspoons dried basil
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 1/2 cup small pasta shells
- Fresh basil leaves and shaved Parmesan cheese, optional
