Greek Yogurt Chicken Salad

Mix all ingredients. Squeeze lemon juice over all and mix well

Pecan Pie Muffins

Creamy Mocha

In medium bowl, beat yogurt, coffee and 1 tablespoon of the chocolate syrup with whisk until smooth

- Whipped cream, if desired

Pasta Primavera

Directions Set a large pot of water on the stove over high heat
- 1/2 lb. pasta
- 1 cup broccoli florets
- 1 red bell pepper cut into thin strips
- 3 carrots peeled and cut into thin strips
- 4 asparagus spears trimmed and cut into 1" pieces
- 1/2 cup frozen baby peas, thawed
- 1/2 cup snow peas
- 1/4 lb. green beans trimmed and cut into 1" pieces
- 3 cloves garlic, minced
- 1/4 tsp. red pepper flakes
- 3 roma tomatoes, seeded and diced
- 12 basil leaves, chopped
- 4 tbsp. butter
- 1/4 cup chicken or vegetable broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
Brunch Enchiladas

- 1 cup chopped red bell pepper
- 1/2 cup chopped green onions (8 medium)
- 2 cups shredded cheese (8 oz)
- 10 flour tortillas for burritos
- 6 eggs
- 2 cups half/half
- 1 tbsp. flour

Mediterranean Spinach and Beans

In a large skillet, heat oil over medium-high heat
- 1 tbsp. olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 can (14 1/2 oz.) diced tomatoes, undrained
- 2 tbsp. Worcestershire sauce
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. crushed red pepper flakes
- 1 can (15 oz.) cannellini beans, rinsed and drained
- 1 can (14 oz.) water-packed artichoke heats, rinsed, drained and quartered
- 1 pkg. (6 oz.) fresh baby spinach
Unstuffed Cabbage
