Shredded Chicken Mexican Lasagna Recipe by What's Gaby Cooking

Directions Preheat the oven to 350 degrees F and spray a baking sheet with oil
- 6 small corn tortillas cut into quarters
- l egg
- 1/4 cup milk
- 1/4 cup sour cream
- 1 cup mild or spicy chunky salsa
- 1 lg. cooked shredded chicken breast
- 4 oz. cream cheese, cut into 1/2 inch cubes
- 2 tsp. chopped fresh cilantro
- 3 scallions, chopped
- 1 tsp. kosher salt
- 2 cups shredded Mexican cheese
Marinated Cucumbers, Onions, and Tomatoes

Combine ingredients in a large bowl and mix well
- 3 medium cucumbers, peeled and sliced 1/4" thick
- 1 medium onion, sliced and separated into rings

- 1 recipe homemade cornbread or 2 6-oz. pkg. cornbread mix, prepared
- 5 boneless chicken breasts, cooked
- 2 slices bread, toasted
- 1 small onion, chopped
- 2 stalks celery, chopped
- 1-2 tsp. sage
- 1-2 tsp. poultry seasoning
- salt and pepper to taste
- 2 10 oz. cans cream of chicken soup
- 1 stick butter, melted
- 2 cups chicken broth
