White Chicken Enchiladas

Preheat oven to 350. Grease a 9x13" pan
- 10 soft corn or flour tortillas
- 2 cups cooked shredded chicken
- 2 cups shredded Monterey Jack Cheese
- 3 Tbsp. flour
- 3 Tbsp. butter
- 2 cups chicken broth
- 1 cup sour cream
- 1 (4 oz.) can diced green chilies
Mexican Bean Salad

In a large bowl, combine beans, bell peppers, corn, and onion
- 1 (15 oz.) can black beans, rinsed and drained
- 1 (15 oz.) can kidney beans, rinsed and drained
- 1 (15 oz.) can cannellini beans, rinsed and drained
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 (10 oz.) pkg. frozen corn kernels, thawed
- 1 red onion, chopped
- 1/2 cup olive oil
- 1/2 cup red-wine vinegar
- 2 tbsp. fresh lime juice
- 1 tbsp. lemon juice
- 2 tbsp. sugar
- 1 tbsp. salt
- 1 clove garlic, crushed
- 1/4 cup chopped fresh cilantro
- 1/2 tbsp. ground cumin
- 1/2 tbsp. black pepper
- 1 dash hot sauce
- 1/2 tsp. chili powder
Slow-Cooker Three Cheese Broccoli Soup

1 Spray 4-quart slow cooker with cooking spray
- 1/4 1/4 1/4 cup butter or margarine
- 1 1 1 large onion, chopped (1 cup)
- 1/4 1/4 1/4 cup Gold Medal™ all-purpose flour
- 1 1 1 can (12 oz) evaporated milk
- 1 1 1 carton (32 oz) Progresso™ chicken broth (4 cups)
- 1 1 1 bag (14 oz) frozen baby broccoli florets, thawed
- 1/2 1/2 1/2 teaspoon freshly ground pepper
- 1/4 1/4 1/4 teaspoon salt
- 1 1 1 loaf (8 oz) prepared cheese product, cut into cubes
- 1 1/2 1 1/2 1/2 cups shredded extra-sharp Cheddar cheese (6 oz)
- 1 1 1 cup shredded Parmesan cheese (4 oz)
- Additional shredded extra-sharp Cheddar cheese, if desired

- 1 tsp. vanilla

- 1 tablespoon chili powder
- 2 teaspoons garlic powder
- 2 teaspoons dried oregano
- 1 package (8 ounces) cream cheese, cubed
- 20 flour tortillas (8 inches), warmed
- 4 cups shredded Mexican cheese blend
