Caramel-Coated Spiced Snack Mix

Preheat oven to 300 degrees
- 1 12 oz. box crispy corn cereal
- 1 12 oz. box crispy rice cereal
- 1 1/2 cups mixed nuts
- 1/2 cup packed brown sugar
- 1/2 cup light-colored corn syrup
- 1/2 cup butter
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1 1/2 cups chocolate-covered raisins
- 1 1/2 cups semisweet or milk chocolate pieces
Chicken Italienne

Heat oven to 350 degrees. Spray roaster with non-stick spray
- 1 1 1/2 lb. boneless skinless chicken breasts
- 1 1 1/2 lb. Italian sausage (hot or regular)
- 1 lb. baby carrots
- 1 green pepper, sliced
- 6 - 1 - potatoes
- 1 tsp. Italian seasoning
- 1/2 cup water

In small mixer bowl, combine all ingredients
- 1 1/2 cup all-purpose flour
- 1/2 cup milk
- 2 eggs
- 1/2 tsp. salt
Caramel Sauce

- 1 cup packed brown sugar
- 1/2 cup heavy cream
- 4 tbsp. butter
- pinch of sea salt
- 1 tbsp. vanilla extract
Marinated Cucumbers

- 1 medium cucumber
- 1 small onion
- 1/2 cup vinegar
- 1/2 cup water
- 2 tbsp. sugar
- 1/4 tsp. salt
Peppermint Pattie Brownies

Heat oven to 350 degrees (325 degrees for glass baking dish)
- 24 small peppermint patties
- 1 1/2 cup (3 sticks) butter or margarine, melted
- 3 cups sugar
- 1 tbsp. vanilla extract
- 5 eggs
- 2 cups all-purpose flour
- 1 cup cocoa
- 1 tsp. baking powder
- 1 tsp. salt
Mint-Mallow Chocolate Cups

In a microwave, melt chocolate chips; stir until smooth
- 1 cup (6 oz) semisweet chocolate chips
- 12 large marshmallows
- 1/4 cup milk
- 1/2 tsp. vanilla extract
- 1/8 tsp. peppermint extract
- 3 drops red or green food coloring
- dash salt
- 1/2 cup heavy whipping cream
- 3 tbsp. crushed peppermint and/or spearment candies
Cheese Topped Grilled Tomatoes

- 4 plum tomatoes, cut lengthwise in half (can use any tomato)
- 1/4 cup light zesty Italian dressing
- 1/2 cup shredded mozzarella cheese
- 2 tbsp. grated parmesan cheese
- 1 tbsp. chopped fresh herbs (basil, chives, and/or parsley)
Apple Crisp

Topping: 1/3 cup flour 1 cup oatmeal 1/2 cup brown sugar 1/4 tsp
- 4 cups sliced apples (about 6 medium apples)
- 1 tsp. lemon juice
- 1 tsp. cinnamon
- 1/2 cup sugar
- Slice apples in a bowl of salt water, drain. Add lemon juice, cinnamon and sugar. Mix well.
Rice Krispie Treats

- 1/4 cup butter or margarine
- 1 pkg. (10 oz.) marshmallows
- 5 cups rice krispie cereal
