Corn Relish

Place corn, red onion, bell pepper and mustard seeds in a medium heat proof bowl
- 14.4 oz. bag thawed corn kernels
- 1 c finely sliced red onion
- 1/2 c finely chopped red bell pepper
- 1 T mustard seeds
- 1 c apple cider vinegar
- 1/3 c sugar
- 2 T canola oil
- 1 T kosher salt
Honey Butter Creamed Corn

Melt butter in skillet over medium heat and add onion
- 3 T unsalted melted butter
- 1 finely chopped onion
- 1 bag frozen corn
- 1/2 c water
- 1/4 c heavy whipping cream
- 1 T honey
- 2 t fresh thryme
- 1 t kosher salt
- 1/4 t pepper
Blueberry Cake

Preheat oven to 350. Grease and flour 8x8 pan
- 1-1/2 c plus 1 T flour divided plus more for pan
- 1 t baking powder
- 1/4 t kosher salt
- 1/2 c unsalted butter softened plus more for pan
- 3/4 c sugar
- 2 eggs with whites and yolks separated
- 1 t vanilla
- 1/3 c milk
- 1-1/2 c fresh blueberries
- 1 t turbinado sugar
Red Cabbage Slaw

Stir all ingredients except onion in a bowl until well combined
- 1 small head of red cabbage thinly sliced and chopped about 5 cups
- 1/2 c grated carrot
- 1/2 c mayo
- 1/4 c dried cranberries
- 1/4 c chopped walnuts
- 2 T apple cider vinegar
- 1 t sugar or more to taste
- Pinch of pepper
- 1 chopped green onion
Mini Nutella Pies

Roll out pie crust and cut 12 circles using 3" round cutter
- 1 Refrigerated 10 inch pie crust
- 1 Jar Nutella
- 1 Bag Mini Marshmallows
Egg in a Basket

Preheat oven to 400. Coat baking sheet in oil
- 8 Everything Bagels cut in half
- 8 eggs
- 1-1/2 c cherry tomatoes halved
- 1/2 c pitted and sliced Kalamata olives
- 1/2-1 c chopped fresh herbs such as oregano or parsley or mint
- 1/2 c crumbled feta
Upside Down Pizza Skillet Casserole

Coat a large skillet with cooking spray; heat skillet over medium-high heat
- Nonstick cooking spray
- 1 pound extra-lean ground beef
- 8 ounces uncooked Italian turkey sausage
- ½ teaspoon dried oregano, crushed
- ¼ teaspoon fennel seeds, crushed
- 2 cups packaged sliced fresh mushrooms
- 1 4 ounce can pitted sliced black olives, drained
- ½ cup chopped onion
- 1 15 ounce can pizza sauce
- ½ cup water
- ¼ teaspoon salt
- 3 ounces Italian bread cut into 1/2-inch cubes toasted
- ¾ cup shredded part-skim mozzarella cheese or shredded reduced-fat Italian blend cheeses (3 ounces)
- Grated Parmesan cheese and/or dried oregano crushed and/or crushed red pepper
Skillet Taco Pie

In a large skillet cook ground meat and poblano pepper over medium-high heat until meat is browned
- 1 pound ground turkey breast or extra-lean ground beef
- 1 fresh poblano chile pepper seeded and chopped
- 15 ounce can no-salt-added black beans rinsed and drained
- 8 ounce can tomato sauce
- ½ cup salsa
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- 4 taco shells broken
- ¼ cup sliced green onions
- 1 cup shredded reduced-fat cheddar cheese or Mexican-style four cheese blend
- Shredded lettuce
- Chopped fresh tomatoes
Chicken Dijonnaise

Place each chicken breast half between two pieces of plastic wrap
- 4 skinless boneless chicken breast halves (about 1-1/4 to 1-1/2 pounds total)
- ¼ cup all-purpose flour
- ¼ teaspoon ground black pepper
- 2 tablespoons butter
- 2 tablespoons chopped green onion (1)
- 1/3 cup whipping cream
- 3 tablespoons dry white wine or chicken broth
- 3 tablespoons Dijon-style mustard
- Fresh thyme (optional)

- Nonstick cooking spray
- 8 ounces ground beef
- ¾ cup chopped green or red or yellow sweet pepper
- ½ cup chopped onion
- 2 cloves garlic, minced
- 1 23.5 ounce jar light traditional-flavored pasta sauce such as Prego Heart Smart
- 1 cup water
- 2 cups packaged sliced fresh mushrooms
- 3 cups dried wide egg noodles
- ½ cup light ricotta cheese
- 2 tablespoons grated Parmesan or Romano cheese
- ½ teaspoon dried Italian seasoning crushed
- ½ cup shredded part-skim mozzarella cheese (2 oz.)
