Lemon-Lime Soda Cake with Vanilla Glaze

Preheat oven to 325°. Generously grease and flour a 10 inch Bundt pan
- 1 1/2 c unsalted butter softened
- 3 c flour
- 3 c sugar
- 5 eggs
- 2 T plus 1/2 t lemon zest or extract DIVIDED
- 1 cup plus 3 T 7 up or Sprite DIVIDED
- 3 c powdered sugar
- 1/2 c whole milk
- 1/2 t vanilla extract
Grilled Pizza with Chicken and Peach

Preheat grill to high (450-500) and lightly oil grates
- Olive oil for grill grates and peach
- 1 c whole milk ricotta cheese
- 2 T whipping cream
- 2 large cloves garlic finely chopped
- 1 peach pitted and halved
- 1 lb fresh pizza dough stretched and rolled into 14" round
- 8 oz or 2 c mozzarella cheese shredded and divided
- 1 c shredded rotisserie chicken
- 1/2 c thinly sliced red onion
- fresh basil torn for serving
Chocolate-Marshmallow-Peanut Clusters

Line two cookie sheets with waxed paper; set aside
- 6 ounces chocolate-flavor candy coating coarsely chopped
- 1 cup semisweet chocolate pieces
- 1 cup creamy peanut butter
- 10 ounce package tiny marshmallows
- 1 1/2 c honey roasted or dry peanuts
Key Lime Cheesecake Bars

In small bowl combine graham crackers, butter, and sugar
- 12 squares low-fat honey graham crackers finely crushed (1 cup)
- ¼ cup butter melted
- 1 teaspoon sugar
- 1 0.3 ounce package sugar-free low-calorie lime-flavored gelatin
- ¾ cup boiling water
- 1 ½ cups low-fat or fat-free cottage cheese
- 8 ounce container reduced-fat cream cheese (Neufchatel) or fat-free cream cheese cut up and softened
- 8 ounce container frozen light or fat-free whipped dessert topping thawed
